I believe it's much less spicy than say 20 years ago since people travel a lot more than before. I tasted them and they are OK. More 5han twenty years ago I traveled to Changsha once. I was so hungry since anything I put in my month I threw them out right away. It burnt my whole month so bad.

Spicy food is considered second rate Chinese cuisine if you compare it southern Chinese cuisine especially in Guangdong. The chili and peppercorns are used as an aphrodisiac since ancient times to eliminate water and bloating in the body areas of China that are extremely humid and has now become a style of Chinese cuisine in those regions.

Chongqing is the place that I've been dying to visit because I LOVE spicy food. In Taiwan, we have quite a few Sichuan restaurants and I tried to order Sichuan dishes whenever I opt for Asian food (even when I was in Europe or USA) and they NEVER disappoint! 😂Even Chinese from different parts have been debating on this tofu dish (called Douhua) for long long time. The people from the north and west like it to be savory and slaty, while most southern Chinese like to have it with sugar or syrup. They would never come to a consensus on this topic.

I'm not sure how you ate the tofu. You need to dip it in the sauce and blend it with the white rice, so the end product sort of tastes like stir fried rice with more moisture. If you just eat the tofu it will be too bland.

A useful phrase you can use when traveling in China is: "Buyao la = don't want spicy". Or "Bu la = no spicy". Being from Taiwan, I am also not used to eating spicy foods. You can always say that when you order. There are plenty of Chinese who don't appreciate spicy foods.

In China the rice is there to soak up the oil and broth and spice from the main dishes. Hot Pot is my favorite. You’re usually able to make/create your own side sauce, and if you add sesame paste to your sauce it’s a great coolant. Also (most) Chinese restaurants aren’t too adept and making dishes to order. But most times you can say not spicy

Original Thai cuisine had much in common with dietary practices of the Szechuan province of China. A lot of food in Asia originated from China especially those near the border of China. The food in and near Miao Prefecture probably are very similar to SE Asia food. The food near North East of China have strong influence on Korean food and Russian food. I think Shenyang actually have a Korean town.

What you had was the spicy version because of the spicy sauce and pickled vegetables, and you're supposed to eat with spoon.
