I tried a version of your slow cooking. The only difference is I used a method of doing the dough slightly different, which in the end, the bread smells so sour, I can't wait to try it. Turned out real well, fit the 800g of flour that normally would make 2 normal artisan style breads I make.

Good luck! Overfermenting is another issue in that hot weather. Cold water in the mix helps :)

This is great! Like others have mentioned, this would be a game changer in Summer - I could see this set up outside on a table near the back door and just bring in the bread when it was baked! A real game changer! Also could be helpful if you wanted to keep a main oven gluten free, and use the slow cooker for whole wheat bread and it would be more economical than using a regular oven, if you are just baking one loaf of bread.

Bit patronising there David, but I must say that as a VERY experienced viewer of sourdough videos, Elly's are better than any professional baker out there. She does indeed get straight to it, but even more, she covers every fine point of detail a home cook could encounter. I didn't start making good sourdough until I discovered Elly 😊

Oh my, something else to try. Thank you very much Elly. :-) Actually, I have a novelty bread "recipe" to pass on too, involving frozen raspberries and white chocolate (in my case a half price Easter egg). I'm sure everyone can fill in the gaps for themselves, the main tricks being to drain the fruit and use the juice for the liquid in the dough, and to start off with a dryish dough because those berries just keep on liquifying so you'll wind up with something like a ciabatta whatever you do. It's very pink!

Thanks for this idea and you calm voice explaining it :) I wonder if you can bake bread in that low temperature(99 C) in oven. I read tha slow cooker heat up to 149 C, but product just get 99 C. So I wonder if there is any benefit of slow baking and low temperature for the final sordough bread. And I dont have slow cooker, so I will try to bake it in oven.

Hi Michal, generally speaking, the hotter the better for baking bread. I don't think that 99C would be hot enough, but you could try it with a small batch and see!

Wow. I love LOVE it. Would it work using a double the ingredients in a big 4 quarts?/4 liter slowcooker? Also have u ever made stove top sourdough bread. To make something like pita bread or a flat bread?

What exactly do you mean when you say one loaf was 70% hydration and the rye loaf was 100% hydration? I get that the higher the percentage the wetter it is, but I have no idea what hydration the loaf I am baking today is for instance.

Hydration refers to the amount of water in the loaf calculated as a percentage of the total flour amount. So, if there's 1000g of flour used and 700g water, the loaf is 70% hydration - you can look up baker's percentages to learn more about it. I'm not super interested in the calculations, but I do check the water amounts, particularly with whole grain flours.

You definitely need more water (in my opinion anyway) with whole grain flour. I like between 80 and 90% with my wheat flour, though different grains and flours absorb different amounts. I'd experiment with your flour and see what works best for you.

Hydration just refers to the amount of water in the loaf. If a loaf has 100% hydration then the water and flour amounts are the same. The water is calculated as a percentage of the total flour amount. Eg, 50% hydration would have half the amount of water as there is flour in the recipe. I hope that makes sense!

Hi Belinda, I'm not sure to be honest - if you google temperature for high setting on crock pot you might get an idea. Maybe somewhere around 150°C? That's just a guess though.

Hey yo Elly! I made sourdough with white Bread Flour. I seen low active loaf also, turns out/doesn't rise, like a bagel. Is the discard a fact of life? Maybe same reason I don't want to "inspect my bee hive." I eat my bread with butter, when I watch movies!

I have a question about the sourdough starter, It took me forever to get my starter working, but finally got it. Someone suggested using Kombucha and it worked amazingly. But now when I make things English muffins for example when I cut them open there's brown staining on the inside. Can anyone tell me why and does that mean it has been contaminated or is it ok to continue using the starter? HELP!

I'm not sure Diana, but I do know that a kombucha culture is made up of different bacterias and yeasts than a sourdough culture, so you may not have the ones you need to make your bread successfully. Maybe a web search will reveal some more info for you?

It will eventually overcook and dry out. The top will never caramelise unfortunately, but I guess the bottom would get more 'baked' if you cook it longer :)

Hi Rosemary, yes if I needed to, I would definitely still use this method! Most of the time I just use my oven though. It can get up to the very high 30's here in Brisbane, but usually low-mid 30's is our regular hot summer weather.
