Tommy, I am going to try this technique on my next baby back cook. They are finicky for me on my Cajun Grill but have had enough super results to keep me searching for the Holy Grail. I haven’t nailed the 3-2-1 to my satisfaction so this is in BBQ queue, for sure. Keep on truckin’, Tommy!

Just watched this awesome video here in Brunswick, GA at 3:00am and if a store was open I’d be eating these bad boys for breakfast!! 😅😂. I’m so thankful for your videos and for this particular recipe as the 3-2-1 just never was mastered for whatever reason. This my man is over the top! Hey Tommy, I asked you in another comment if you prefer the blue bag charcoal or lump. I did a rib cook with lump, turned out great , didn’t have that charcoal “tang” taste that charcoal can have but used 3/4 of a 18# bag. You were right! Burns too fast!!! Gonna stick with the blue bag! Lol

That's about right. That bottom rack sits very close to the heat assembly. I cook the most low and slow from the middle rack.

Kelly, yes. These would be amazing on the vertical. just make sure you have water in the pan and your temp is right inside the vertical.

Marco the reason i do baby back or pork ribs more then any other cut is because you can serve them so many different ways,. My wife loves the no wraps in this video, and so do I... that said, I love them all:)..

You can go water pan or not. Just go 250f no wrap. That said. You have to make sure your 250f inside the pit. Dont go by the control panal you must you an outside source. If you need one email me gallerybbq@gmail.com

Lord have mercy.. if you haven't already....i believe you should open up a restaurant or at least a food truck. if your food tastes half as good as it looks you will succeed for sure.

1/4 cup sugar 1/4 cup non-iodized table salt 1/8 cup brown sugar, dried 4 teaspoons chili powder 2 teaspoons ground cumin 1 teaspoon Accent (MSG) 1 teaspoon cayenne pepper 1 teaspoon black pepper, freshly ground 1 teaspoon granulated garlic powder 1 teaspoon onion powder
