This is a really great excercise! One of my favorite excercises that has made my finger dexterity a lot better is playing thirds with different fingers, like in chopin's etude op 25 no 6 in g# minor. for example you switch between fingers 1, 4 and 2, 5 or 2, 4 and 3, 5.

Great idea for an exercise. Although even as an experienced pianist, I would take this exercise at half your initial speed so I could really focus on technique and relaxation.

tldr yes but I do think you need a practical application to exactly which exercises you choose.
