Nokoss is that one all purpose seasoning that I must have on hand throughout the week. It is a sure way to enhance the flavour of your meals and provides the added herby freshness to your stews , marinades, sauces and stirfrys. Trsditionally Nokoss is prepared by bringing all the ingredients together with rhytmic beats of a mortar and pestle. In this recipe I utilise my trusted blender and prepare a large batch in a few short minutes. I hope you enjoy this recipe and don't forget to share it with your friends and family.
Ingredients :
Parsley
Leek
Shallot
Spring onion
White onion
Sweet pepper
Habanero
Head of garlic
Fresh thyme
Celery
Black peppercorns
Course sea salt
Olive oil
*adjust the ingredients to fit the quantity you desire to make.

How long can we keep the nokkos on the fridge or freezer?

If you top up the container with a neutral oil as you consume the nokoss, it should stay fresh up to two weeks and over. Also using a clean and dry spoon each time you scoop will help keep it fresh. In the case where I make a large batch I freeze a portion of it while I get through what I have in the fridge. Once the frozen nokoss has thawed it is as good as fresh.

I believe nokoss and rof are the same. In some instances the blend of herbs and spices are fried in oil until all moisture is cooked out before storing. It may be the case that the names differs depending on the language spoken. For example Mandinka or Wolof. I am not Senegalese but I hope someone who is can add to this discussion 😊
