I remember Oumar, he was featured in one of munchies videos. He is a hard working and adventurous man with talent. Travel across the world honing his skills, sacrificed a lot for his dream, he is a great inspiration. Everything he cooks looks delicious and I hope, since he is so wholesome, that sooner or later he gets some more media attention, what a contrast between him and some celebrity chefs!! Tres bien mon frere! As an American, I work in Mali, a Senegal bordering country and I see this cuisine influence. Unlike the Malians, the Senegalese have mastered the pepper, thank you. I would add some tomato to the greens and kick this out on a baguette/sandwich option as well. Clever and brilliant recipe!
