Adam "Nolly" Getgood shows his process for creating a kick drum sample track in this tutorial. He uses Logic Pro X, but you should be able to adapt the process to any DAW and stock plugins.
He touches on:
Choosing which acoustic kick track to use as the basis for your sample track
Pre-processing the acoustic track with SPL Transient Designer and Fabfilter Pro G
Converting the acoustic track into a MIDI track that will trigger the kick drum sample
Manually adjusting the timing and velocity of the MIDI notes
Adding an instance of the Getgood Drums Matt Halpern signature library
Checking for phase alignment and other issues
Printing an audio track of the final kick drum samples which can then be blended in with the acoustic drums
