I can't wait to try this recipe. My grandparents came to the US from Calabria many years ago. My grandmother used to make a zucchini salad with charred, crushed mint and red wine vinegar dressing. Do you know about how to make that? I've been trying to find a recipe and never have yet. My attempts have not been as successful as I'd hoped.

Yes, you are right. This is my classic frittata: kzbin.info/www/bejne/pXuQhWNuf7SpeNE. I'm not sure why we always called this zucchini frittata but that is why I put spread in brackets ....
