Y’all are complaining about a knife. The purpose of a ceramic knife for apples is that it doesn’t oxidize. You avoid metal. Even the pot he cooked it in wasn’t metal.

It hurts both my ears and soul. A knife isn't supposed to sound like that. It's like listening a child crying in pain. The sound of knife should be smooth and low. Nothing sounds as painful as unkept or mistreated knives.

So I don't bake frequently, I can only really make soft pretzels, banana bread, and cookies. But I actually decided to make this yesterday and I want to share my failures and successes to anyone that might want to attempt it as well. First off, this cake cost me around 80 dollars, and took about 9 hours to make, so make sure you have a day set aside. Now this is given that I didn't have a mandolin slicer and needed a new knife sharpener. Also if you live in America you NEED a kitchen scale to get any of the measurements right. I ended up doubling the whole recipe because I didn't have the right sized pans. Cutting the apples at the beginning is tedious but it helps to use a vegetable peeler instead of using a knife to peel the apples. The apples take about 40 minuets to cook down so put on some animal planet and wait. Lots of people in the comments are talking about the ceramic knife and pot, I didn't have either of those and I didn't have a problem with browning. If you're worried about it, just get some lemon juice spray and spritz your apples occasionally. The cheesecake part itself it's too hard to do. For the whipped cream put heavy whipping cream in a stand mixer and set it on low-med. After a few minuets slowly add in about 3/4 cup of powdered sugar. Continue mixing till it thickens and can make little peaks, but not stiff peaks. I realized that we didn't have any vanilla extract so I used almond extract instead and it turned out fine. Oh by the way if you don't know what lotus cookies are, look for biscoff cookies. Maybe I'm just stupid but I didn't know they were the same thing. Make sure that when you're pouring in the first layer of cake you do just enough to cover the crust, if you do too much it'll make it hard to do the top. Using a mandolin slicer is really fun haha. If yours has 3 settings, put it on 2. I cut about 3 apples but I didn't end up using all of them for the top. Now this is where everything went wrong. For the 'peach flavored drink' I bought some peach nectar thing, don't get it. MAKE SURE THE DRINK YOU BUY IS CLEAR or the top just won't work. I made it and realized that the top can't be orange, so I poured it out and went to make an unflavored version only to find out we had no more gelatin. I was determined to complete this thing so I went to the store for the third time. Now, this was at 8:30 at night but I WENT TO THREE STORES AND NONE OF THEM HAD UNFLAVORED GELITINE WHAT THE FUCK? I went home in shame and arranged the apples on top decided that if it didn't have the clear layer on top, the world wouldn't explode. The cake turned out really pretty, cutting it is kind of hard unless you have a very sharp knife because of the apples on top. I recommend adding a bit more gelatin than it tells you to because it doesn't really hold it shape after you cut it. It's delicious and my family loved it so I'm afraid I will have to make it again haha. I don't recommend making this as just a fun desert after dinner, only make it if you're looking for a challenge. But I did have a fun time and get to enjoy an awesome cake. Great video :)

Assuming this person lives in Korea, granny smith apples likely aren't available. When I lived there 6 years ago they weren't available, and now in Japan there's mostly Fuji apples. Maybe they're primarily a north american strain. I bake a lot and I'd kill for some granny smith apples!

I've tried this and it become my favorite!!🤤 Thank you so very much for a great VDOclip and the recipe.👍👍 I have no gelatin sheets only powder, so i use 75% of the recipe (if recipe said 10gram of gelatin sheet. I'll put 7.5gram of gelatin powder...i dont know the correct way to convert but the result is perfect to me🤩🤩) As i dont like it too sweet, so i reduce 20% of sugar. And to prevent apple floating; I press the top apple on the last layer of cream cheese before it compleatly set, let it set in fridge for 15 mins then add half peach jelly+let set for 15 mins then finish with adding another half))

@@isntrik8889 You pour in about 1/3 of the mix and if the apple do flout simply push them down with a toothpick. After you've poured the 1/3 let it set for 30 min in the fridge and then pour the rest.

I tried this and everything went mostly well until I poured the the gelatine overtop. The apples floated because I didn't secure them enough and parts of the cheesecake also floated. It did taste pretty good though.

@@rab3220 If you pour in about a 1/3 for the clear gelatin mix your apples shouldn't flow up then you put it in the fridge for 30 min and then pour the rest over. And it won't leak to the layer under unless you really botched things up . I hope this makes sense.

Regarding the apples, as seen in the video they will rise a bit to the top, we can't do anything about that. My tips are: pour slowley and pour in the middle as she did and only about 1/3 of the total amount.

I bought it at an internet shopping mall in Korea~ If you search Amazon or Internet sites, there will be many products~^^

search up 'springform pan'. it will show you the baking pan with removable sides

They use a lot of ring molds in these videos & there are many available on Amazon. I think I've seen them use one that has a removable bottom (like a springform pan) & you can find those on Amazon too. You can even get ones that have an adjustable diameter. The larger one used in this video looks like it's probably between 6-8inches (~150-200mm) in diameter.

Tried it out, little too heavy on the cream cheese for me..I'll try adding less next time. Also if you don't want the apples to brown that much try soaking them in lemon juice or lemon water

As soon as I cut the apple slices I added them to the lemon water. After that before it was time to assemble the cake on top I added sugar.
