Hello everyone, this is Emojoie.
I made my favourite cheesecake with Lotus Biscoff which is also my favourite.
This cheesecake contains no gelatin, so it has a very smooth texture.
In this recipe, it’s very important to whip the whipping cream and mascarpone until stiff.

■18cm cheesecake *8〜12cuts
120g Lotus Biscoff
40g unsalted butter
80g powdered sugar
200g whipping cream 35-45%fat
400g mascarpone cheese
100g Lotus Biscoff spread
200g cream cheese 30%fat
100g Lotus Biscoff spread
6-8 Lotus Biscoff cookies
-Conversion Guide-
18 cm (7 inch)→15 cm (6 inch)
Ingredients 0.7 times
18 cm (7 inch) → 21 cm (8.2 inch)
Ingredients 1.5 times
➢Crust Dough 00:06
Crumble the cookies and mix with the melted butter. (The easiest way is to put the cookies in a plastic bag and crumble them with a rolling pin.)
Spread the cookies all over in an 18cm mold and refrigerate it.
➢Cheesecake 01:52
Add powdered sugar to the whipping cream and beat it. (Powdered sugar contains starch, so you can whip it harder than granulated sugar.)
Add mascarpone and whip it until stiff.
Mix room temperature cream cheese and spread then put it in the bowl.
Do not over-mix once you add the cream cheese.
Pour the batter into the mold, flatten it and then chill it in the freezer.
Microwave the spread slightly to soften it and pour it over the cheesecake.
Put it in the refrigerator overnight.
Remove the cheesecake mold. (If the mold is not covered with a film, warm the mold with a hot towel before removing.)
Finally, decorate the cheesecake with cookies.

ニューヨークチーズケーキの時はグラニュー糖使ってたから、なんで今回粉糖なんだろうと思ったけど、ちゃんと理由を字幕で教えてくれてる。有難い。えもじょわさんの動画は見て美味しいし、作って美味しいし、音はいいし、お菓子作りの勉強になるし、動画見るだけで一石四鳥。

Made it… and the cheese cake part was so light and perfect! Also made own spread to use up costco amount of biscoff😂Thank you for the recipe🥰 自社の機内サービスでずっとビスコフクッキー出していてチーズケーキ気になっていたんですがやっと😂スプレッドはコストコ量のクッキー消費に自分で作りました。マスカルポーネのチーズケーキが軽くてとても美味しかったです❤

絶対おいしいやつやん(ロータススプレッドって何だろう?)って思いながら見てたら概要欄がいたれりつくせりでした。買って作らねば。 似たようなレシピだと砕いたクッキーがクリームの水分でふにゃふにゃになるんだけど、えもじょわさんのは美味しそうですね。使ってるチーズの量が段違いだからなのかな? 何にせよ、美味しそう!作ります!

Hi Emojoie, I love ❤️ your videos, may I ask how do you make your top layer of Lotus Biscoff Spread so runny? Before you refrigerate to harden the whole cheesecake? Is it by microwaving the 100g of Biscoff Spread to make it “liquified” to pour on top of the cheesecake? 😊

You can just microwave it till just warm.... should be runny enough to pour over on top and spread evenly!

Hello! I’m a huge fan from Malaysia. Never bored watching and learning from you. Thank you very much for sharing the recipes. Tried your New York cheesecake and fantastic results! May I ask what’s the difference between mascarpone and cream cheese? Mascarpone is quite pricey here. Is the texture more stable than cream cheese? What is your opinion about baking this cake in a tropical country? Well, everywhere is hot now I assume🤭 once I tried baking using cream cheese without gelatine ( dislike gelatine), it was a failure because the texture was too soft and runny🥲 even after refrigerated for more than a day. @@M.Jo2023 It also has a richer, more delicate and slightly sweeter flavor, not as tangy, and a smoother, thicker texture. I prefer mascarpone by a long shot!
