Hong Kong Comedian Jimmy O Yang once said. Those Hells Kitchen shows, they look like they are killing themselves at the stove, but they are just cooking one dish. You go to any Chinese restaurant, there's about 485 items on the menu and there's one dude back there in the kitchen. He's not even a chef. French toast is easily made at home and soooo versatile in that you can keep it simple, stuff it with what you'd like, even add a crust [think cereal]... I suggest you try Chinese food from different countries because it isn't the same everywhere. Love from Malaysia. Btw ice lemon tea is very common here too and I love them esp on hot sunny day.

She'll probably explore China's territories first like she did with HK and then expand to Chinese food elsewhere. I'm curious what she considers authentic because my viewpoint has changed over the years because of my exposure to Chinese cuisine all over the world.

Hong Kong cafe style specifically curry brisket is unique is because it is usually twiced cooked. They use the chu hou sauce (柱侯酱) and chinese master stock (卤水) to cook the brisket first so they have a batch for the noodles without curry and then they use this main batch for the brisket curry.

Wow! The Lyons (Amy and her parents) can certainly put the food away! I think I got indigestion and heartburn just looking at the delicious spread they have - and actually felt full to the top when the French Toast arrived. Does that restaurant have HK style mixed grill on a sizzling plate? It usually has pork cop, chicken steak and very thin piece of steak, with a hotdog link. Not the best quality of meats but so good.

The Australian Dairy Company is known for its rude service, it's nothing personal. The waitress's mood also plays a part, and it's common for the Thursday service to be especially rude because there is horse racing the night before. Having said that, they do serve food in lightspeed, their scramble egg and double skin milk pudding are also exceptional.

Hongkong restaurants' staff are always rude, the local government actually have a smile campaign to change that, but I think it will be a lost case. As a general, Hongkongers are not pleasant to speak with, they always shout specially vendors and they shoo you away whenever you ask for direction.

Poor customer service means the restaurant doesn't really care for your business, and hence doesn't deserve my patronage. Just my experience from many restaurant collabs. There are usually multiple similar restaurants to visit instead.

Oxtail meat is so tender. I grew up eating oxtail pho or pork trotter bun bo hue and always thought the meat was a bit weird. Now growing up I love oxtail so much but the prices of them have skyrockted. These meat cuts used to be undesireable or fringe/abnormal but now people have discovered how tasty it is and it's just so expensive now ($10/lb for Oxtail or maybe $8/lb on sale). I bet it was less than $5/lb two decades ago when I was growing up as a kid.

I recommend you to go to Hong Kong, asked a few friends and have dinner with you. All the Chinese restaurants have set dinner for 12 or 6 persons. They serve different dishes, and I think you will like it.
