To avoid sticking and for more even browning on the bottom. I always use parchment for these reasons as well as easy clean up.

I have been trying to make buttermilk biscuits for years now and they just dont come out right for me. Till I made this recipe...so easy and they taste sooo good! I sent some biscuits that I cut in half and filled with ham and cheese with my other half to work and he loved them!! Thanks so much for your wonderful recipes Noreen!

These are THE BEST biscuits ever!!! I've made them several times and Ive used both shortening and butter. Much more layers with butter but shortening works great in a pinch! Thanks for sharing this awesomeness with the world!

@fraser8402 Not a silly question at all! Baking soda is bicarbonate of soda and is a natural substance. It is a leavener, meaning, it will make things rise to a degree. Baking powder is baking soda mixed with cream of tartar. This combination is also a leavener and will make things rise higher. When purchasing baking soda you should always look for one that contains no aluminium. I use Rumford exclusively for this reason. Hope that helps! Noreen

If you are trying to make a sweet biscuit like for strawberry short cake, I would add no more than 1/4 cup to the recipe. I also have a recipe for cinnamon raisin biscuits using this recipe as a base and they have an icing glaze on top. Hope that helps.

I just wanted to tell you I found your channel by accident 2 months ago because my 3 year old twins like to dance to your opening song! In that time I have made your biscuits with sausage gravy, Texas sheet cake, pineapple upside down cake and cream pie!!! Everything has turned out great and been delicious-thanks:)

Thank u so much for these delish biscuits. I don't keep a lot of buttermilk in fridge cause no one drinks it and it goes bad. Therefore I found buttermilk powder that u mix with milk and last a long time and never spoil. Try it, works just as great. Keep the delicious meals coming

These biscuits freeze very well. I live alone so I cannot eat a full recipe of these little jewels. After I gorge myself I wrap each left over biscuit in plastic wrap and freeze them. I later thaw one or two in the microwave and then brown them up in my toaster oven. YUM!

One teaspoon of baking powder to 2 teaspoons of cream of tartar well mixed. So a 2 to one ration of cream of tartar to baking soda. Hope that helps!

Great video, thank you for using butter and not shortening in your biscuits. Just a note for the stores: If they sell in pints not quarts they would sell more as the quarts are expensive over $4.00 here with milk coming in this morning at Price Chopper for $4.79 per gallon. Most recipes only need a small amount of buttermilk and a quart would go to waste.

My mom made biscuts or johnnycake every night. My dad was from the south. She had a huge metal can, abouttwenty pounds of flour. She would make a hollo spot in the flour in the can, add the powder and milk and all. Mix it and pull it out of the can. Rolled out on a stainless steel cupboard, I have it now. Can biscuts not allowed in her kitchen. Thanks Noreen, God bless.

@katzcradul Hard to believe, I know! When I was a kid, my Nanny had it all the time. I don't like milk so much but a tall glass of ice cold buttermilk is something special! Everyone else in the house cringes when they see me drinking it. But I love it! I have also used powdered buttermilk in some things but never this recipe, I don't see why it wouldn't work. Just bought a #10 can of it from Auguson Farms.

Just passing along, I just made these (got flour on my keyboard, haha:) with 3/4 cup yogurt and 1/4 cup water to two cups flour. Used tablespoon baking powder and teaspoon baking soda. Really great. Won't get reply on this but hope you enjoy. I don't know how to get replies.

@linlovesyou1 Just add some more flour until you get the right consistency. Don't sweat it. Add it in 1/4 cup at a time. you'll be fine.

I don't make putff pastry. I buy it. Too much work for what you end up with anyway. It's cheaper, ounce per ounce to just purchase a good quality version to use. I don't use puff pastry that often for this to be a homemade item anyway. Sometimes you simply need to pick and choose this is one of those times.

I cannot duplicate hers. I have never had one problem with this recipe. Every time I make them, they come out perfect. it would be nice if someone uploaded a video proving that twisting while cutting makes lop sided biscuits. My mother and others have always twisted while cutting their biscuits and they've always turned out perfect. You are not the only one who has said that but no one ever does it on video to show you. I'm sure the biscuits would still be edible. Oh thank you for your videos. They are great.

As a Georgia girl, I watch a lot of folks make biscuits on TV, and think, "You are REALLY overcomplicating this!!" Biscuits were one of the first things I learned to make- they're just meant to be a really fast, easy bread to go with your dinner! No kneading, no rising- you just throw it all together in a bowl, pat out the dough, cut 'em, and bake 'em- just that simple! BAM! No Cuisinart necessary, y'all!

One little trick I learned from a local restaurant, when you get the nice rectangle of dough you had at the beginning, I just cut square biscuits out of it. No need to reroll. Nothing says a biscuit has to be round. Just a thought and time saving too.

The biscuit you make with the leftover dough scraps is called a hoecake. At least that’s what my Granny called it. We fought over it. Love your channel Noreen! I’ve learned much from you!

Actually a hoecake is a cornmeal pancake. Also known as a Johnny cake. Totally different from a biscuit. I always knew the scrap biscuit as the “cathead” biscuit because it bigger and not as pretty as the rest. There are other names but regionally it depends on the name. If that is what your Granny called it this was most likely due to some regional reference she remembered.

I don't get my parchment from King Arthur. Too Expensive! I get mine in flat sheets from a website called the baking queen dot com. She has great prices and I usually order 1000 sheets at a time because of the price break at that particular quantity.

momof2 I never have leftover dough. I form all of it into biscuits. I have do e them square before. Don’t like it. Biscuits should be round. To me. So we make them that way. The only biscuits I make Square are my sourdough angel biscuits. This way everyone knows they are sourdough.

Noreen! Too funny! I'm a King Arthur fanatic too - same scraper and same nesting cutters you spoke of! I also use the same basic recipe (thanks for the Red Lobster tips!) but my oven is 450! I can't imagine how you got yours to cook and brown at 350 and in 20 minutes! Mine are perfect in 10-12 at 450. Thanks for the great videos!

+TheJeebs1985 450 is much too high! Then you will burn them. Sounds like you need to calibrate your oven. Your temp may be off.

Noreen, how much powdered buttermilk would someone use to make 2 cups? Have you ever frozen your real butter, then shred it, then add it to the flour mixture? After you blend the butter into the flour mixture, what do you think about setting the bowl into a larger bowl of ice to help keep everything cold? Where did you purchase the board you cut your biscuits on and what size is it please? You do use real butter, right?

one thing we do with the extra biscuit dough - roll them into breadstick shapes, cook with other biscuits, and when they come out of the oven, immediately brush with melted butter and sprinkle cinnamon sugar - yum!!

about the last biscuit: in my home we call that last biscuit the "love biscuit".when my kids were very little they wouldnt touch it and one day I saw it fly across the room; that's how much they hated that mis-shapened biscuit! lol so i came up with a name & shaped into a heart and they loved it! Now they're ages 15.14,12, and 9 and they look forward to and even fight for the "love biscuit". Now the biscuit has become legend; they act as if it some kind of good luck thing. i have weird kids!

Question can the butter be room temperature and does it have to be cubed butter because I have the spreadable butter

The butter must be real butter, not the spreadable type, which is full of chemicals and other poisons. Follow the recipe as written and you will be successful. If you choose to use the spreadable butter, your biscuits will fail because they will be flat and the spreadable butter has too much water in it.
