Noreen, those two loaves of bread look so beautiful & so delicious!!!! It took me back to my kids years in school. I always made gifts for all of their teachers, the aides, bus drivers etc. And then of course I made them for our mailman or mail lady, friends, neighbors & family. What i always made was a quick bread called squash bread. It's very similar to pumpkin bread, but made with thawed frozen squash. I can't even begin to imagine how many i made over the years. I made mini loaves & had two baking pans, that were both essentially 4 mini loaves hooked together. The original recipe made 2 regular size loaves, so I would double my recipe & end up with 8 mini loaves at a time. Once I got one double batch in the oven, I would get all of my ingredients measured out for the next batch. My sons are now married with their own families, but I'm in big trouble if they don't get a few loaves at Christmastime! Your raisin bread looked so awesome, I'm going to give that a try. Thanks for a great recipe that is actually one of my favorite breads!

Hi, Noreen! Thank you so much for this recipe! I am newer to bread making and your videos have helped me immensely. I made this last night and I think I'm going to end up eating the whole loaf today! I left out the swirl (I am pretty lazy lol) and I did make one change. I see that people were asking about if they could use real milk instead of powdered milk. I didn't have powdered milk but I still wanted that moisture that the milk gives, so I actually did 1 cup warm water, 1/2 cup warm buttermilk, and then replaced the milk powder with 2 tbsp of flour. It worked awesome! I am so thrilled with this....thank you so much!

Noreen, I made this last week and it was perfect. Today I tried a different version, I used dried cranberries (instead of raisins) and orange extract (instead of vanilla). So far, so good it's on its first rise & smells fantastic! I got a 6qt bowl lift Kitchenaid for Christmas and have been giving it a workout ever since. If this loaf turns out like I think it will, I will be giving loaves of it during the holidays next year! Thanks again for all of your recipes & hard work, it's greatly appreciated.

Tuesday May 19, 20 20 Noreen... when I needed a really good “Swirly Bread” recipe for my grandson’s 14th birthday, I knew where to go! A couple of weeks ago, I baked the regular loaf, after Heather reminded me of it, so I figured you used it as a base for your Cinnamon Raisin BreAd. I will be baking it sans the raisins, because Andrew likes it that way, I usually use the JKa recipe, but I know this will be much better, I think the regular loaf is the absolute best white bread recipe anywhere. It’s soooo soft and squishy...like good yarn... Thanks ! Sandy from Cincinnati It’s a big recipe, so I bake it in one of my big Paula Deen’s beautiful ceramic loaf pans...gifted to me by my daughter. It’s a perfect fit...

You are a great teacher for new ones in the kitchen, and also ones like me who have been cooking for many, many years. You even answer questions regarding how, and why one should follow certain procedures if a dish is to be cooked properly, and tastes great! I'm gonna try it today. I too had issue with it unraveling in the past. I think it's a great idea that u incorporate the raisins into the dough. I read that spraying the dough with water instead of using butter will help the dough to adhere to each other. Gonna try that. Will let u know how that turns out.

Thanks for the recipe! I made some cinnamon raisin bread today from my mom's old betty crocker cookbook. It's very similar, but I think the vanilla powder in the dough would be amazing next time! Once I break down and get some milk powder I'll try your version.

Hi Noreen! Thanks for the recipe, I love it! I want to make it but with a cinnamon crusted top. I think aJust wondered how you thought it is done. All I would need to do is sprinkle cinnamon and sugar on the top before baking, right? I loved the cinnamon top on the cinnamon raisin bread my elderly neighbor used to make…but I never asked her exactly how it was done.

That's how I do mine - it's amazing. I'm making this recipe tonight, and putting that topping on it. All you do is brush the top with a little milk, and sprinkle on a light coating of cinnamon sugar over the top and bake. (You don't have to put a lot of the cinnamon sugar - you don't want a big hard candy crust on it. Or, maybe you you! lol But really, you don't - it might burn, and that would just ruin everything.)

I really like your videos and your personality, Noreen, and am anxious to try your recipes. Don't get the need for dry milk and have none but think I can substitute liquid milk.

You cannot substitute liquid milk. It does not work that way. The powdered milk is there for a reason. It is a dough amendment. The lactic acid in the powdered milk makes the dough tender and helps keep the bread moist without adding too much water. I promise you if you try to add liquid milk instead of actually following the recipe you will be disappointed. If you don’t have the proper ingredients you should wait until you can procure them. Of course you can simply leave the powdered milk out but it will also not give you a positive end result.

With the other problems you have told me about, I suggest you have your oven calibrated. Sounds like you have a thermostat problem.

How about baking 2 small loaves rather than 1 (reg.) large loaf, then freezing 1 of the loaves? I think since you're freezing a whole loaf, rather than a halved one, the loaf won't dry out. If that's still too much, how about making (hamburger) buns? Bread is bread, right? Good luck!

Oh Ms. Noreen, I have had the hardest time with bread. You make it look so easy and fun, I just.... I don’t know what I’m doing wrong. I tried this recipe and I did exactly as you did until it got going in the mixer, I added flour because it looked super sticky for sooooo long. So, too much flour I believe, then second rise didn’t appear to do much, baked anyway... very dense heavy not a lot of flavor... I just cried.

You cannot freeze the unbaked dough. You can freeze the baked bread. Cooled and tightly wrapped in plastic it will stay freas for up to three months.

Using bread flour will render a much tougher dough. You can of course use it, but it will not be as light and fluffy and may be flat out tough.

Unfortunately creamer won't work here. Milk powder is needed. Creamer has a number of unnecessary ingredients that my inhibit the yeast from rising. I don't think that nuts would be good in this but that is a personal preference. Remember, the more you add to a rising dough the more problems you are going to have with it rising properly and causing air bubbles and holes in the finished loaf.
