Well...MISS NOREEN !!!! I made the Candied Pecans, I did alter the recipe because I only had 4 cups of Pecans. I did what you said and added 1/4 cup of Torani Italian Eggnog. I also substituted the Nutmeg for the Cinnamon. I used 1 1/2 cups sugar. I must tell you that they came out ABSOLUTELY FABULOUS ! This was my first time making them, and my family wants these for a holiday tradition ! Thank you SO much ! It's such a joy to offer something different and tasty for the holidays. I make little wnut dark chocolate brains( that's what I call them) They are super good for you. You can do it with pecans as well. Use the Bain Marie method for the dark chocolate.

I just made these. I think you have the easiest method, so thank you for that! They taste delicious! I'm a little sad they got a bit broken up after stirring and heating for so long. Yes the nuts should be raw. I cannot attest to subbing out any amount for brown sugar. Best I can suggest is to give it a try. I never have.

annandmarie1 sometimes you can buy vanilla sugar. You can make it by placing a split vanilla bean into a jar with 2 cups of sugar. You need to seal the jar and allow it to rest for six months.

+marie Savino They should be dried. Vanilla beans when fresh can be very pliable. So it is best to either let them air dry or throw them in a low dehydrator for about 8 hours till they snap. Then you can break them up and put them through a coffee grinder. I just keep my powder in a little plastic container. I buy my beans in bulk so it is cheaper than purchasing in the store, sometimes.

This definitely looks easier than baking, but mose recipes call for either melted butter or egg whites. The down side of those 2 ingredients is that you would have to keep the pecans refrigerated so this recipe seems smarter.

You do not need to refrigerate the ones with butter or egg whites. Because the candying process made them shelf stable as sugar is a preservative.

As long as it takes. Without sounding like a smarty, you just need to do it till the nuts are coated and crystallized. There really is no set amount of time. There are a lot of factors that contribute to the amount of time it will take, such as the humidity in your area and things like that. If you are a more analytical person, I am sorry, but this is just one of those things where you just have to wing it.
