This is amazing work!! I am sooooo going to do a version of a sahti one day, now that we are in NE we have plenty of evergreens and I'll use maple as a fermentable as well. This video is very motivating.

Do it! But also be aware that not all juniper is food-safe. Do your research or contact a local expert or university extension to identify non-poisonous varieties. We used common juniper in our American versions we brewed back in May and June (en.wikipedia.org/wiki/Juniperus_communis), the variety Ivar and Johnny brought from Norway is different for sure.
