1/2 stick butter
1 cup half & half
The Original:

4oz Yellow Cooper
4oz Extra Sharp Cheddar
Layer in 3-4 slices Swiss
Top with extra sharp cheddar and smoked paprika
Pepper Jack Mac
8oz Pepper Jack Cheese
4oz Vermont (white sharp) Cheddar Cheese
4oz White Queso Cheese
Top with slices of pepper jack
Four Cheddar Mac:
