Agree with you, Tim, that eggs are perhaps the most versatile food on the planet. I eat them every day. I have also studied the way of the French omelette and it’s definitely worth the effort. Lastly, may I say and likely speak for a lot of people out there that a guy with the motivation to cook is an extremely attractive quality. 😊

This is a great video! I remember the first time I made my kids a trifold French omelette several years ago. They loved it, so it became a common lunch at our house along side fruit and toast. I’m an empty nester now this year and already miss making it for my kids. I’ll have to make one for myself this week!

Moving on from omelette, it is an easy step to make crepes. Crepes can be packaged and frozen (worthwhile to make a batch). They lend themselves to filling with protein, or vegetables, fruit, etc. = good for elegantly using up "odds and ends" in the refrigerator. Reheated folded (in fourths) crepes with a fruit and liquor sauce, whipped cream or ice cream are a posh Crepes Suzette-type dessert.

I'm interested in your move from Keto to Carnivore eating also. Can you share a little about that? I' m 70 years of age, simi-retired. I'm in the process of renovating a couple of downstairs bedrooms into studio sized apartments. It has been quite an endeavor. I live in Playas de Tijuana. I came down to Tijuana 26 years ago to help out an orphanage. I stumbled on you by pleasant surprise. You spoke a bit about your spirituality which I really appreciate. I worked with Mother Teresa's congretation for 26 plus years. I am now living here in Mexico, and I work at facility caring for SED youth and children. I really enjoy my time with them (usually just on the weekends). Currently I am in formation with the Secular Carmelites in San Diego which meets once a month. It is truly an enriching experience for me. Thank you so much for sharing a bit of your life and cooking skills. What do you find to be the advantages of the Carnivore diet?

I’ll be doing a video specifically on this soon. But the major factor for me was that on Keto (which I enjoyed) I was constantly tracking calories, carbs, fat, protein, etc for every meal and every snack. It was just tedious. On Carnivore I eat twice a day. I eat until I’m full. Then I stop. No calculations necessary. It was a bit freeing.

I’ve never used the patience you have to make your omelet. So I’m not proud of my results. Edible is all I can claim. Seeing this makes me want to try it again to do better. The only thing about yours that bothers me is that I’ve always believed that eggs should be well done. I’d still love to make one that is as appealing as yours.

Carnivore for a couple of years, my husband is Type 1 diabetic, also Carnivore. Both of us lost over 60 lbs. Medical issues are gone or better. He went from using more than 80 units of insulin daily to 20. Never going back!

I found keto very good and it is not so different from carnivore, there is just more green Veg in keto and meat is in normal proportions. PersonallyI lost 45lbs over 6 months on keto and got my life back as I was able to be a lot more active!

Neither of us needs physical help but it would be easier to maintain one house versus two, we could share the cooking and so forth. I’m happy to have a great relationship with my son, and I bet your mom feels the same. Great job with the omelette! Everyone should know how to cook eggs, bake a chicken, make an interesting salad. I’ve considered starting my own channel for basic nutritional cooking. Good luck with your channel!
