Nut/Seed/Fruit Bars - a perfect snack for hiking, travel, lunch boxes - like Buc-ee’s Nutty Bites

Nut/Seed/Fruit Bars
2 cups pecan pieces
3 cups cashews
1 cup pumpkin seeds
1 cup pistachios
1 cup almonds
1/2 cup sunflower seeds
1 1/2 cup dried blueberries
1 cup Craisins
1 1/2 cups honey
3/4 cup light corn syrup
2 teaspoons Kosher Salt
2 teaspoons vanilla
Combine the first eight ingredients in a large bowl. Set aside.
Line a 12“ x 17“ x 1“ sheet pan with parchment paper. Set aside. 
In a large pan, over high heat, bring the honey and corn syrup to a full rolling boil and cook until it reaches 260°. This is the “hard ball stage”. Remove from the heat and stir in the Kosher Salt and vanilla. Immediately pour this mixture over your nut, seed, fruit mixture and quickly stir to coat everything evenly. 
Dump this mixture onto your parchment paper lined pan and, using dampened hands, press the mixture into an even layer, covering the entire pan. Allow to sit until it is completely cooled. Using a large knife or bench scraper, cut into bars or small bites. Store in a covered container with parchment paper between each layer. 
Save any pieces that crumble off the cut bars and use those for snacking. It’s delicious!

Those look so good! Just the kind of snack I like. I have a tip on how to more easily flatten out the bars. I learned it a couple of years ago when making layered candy bars. After you have the mixture somewhat spread out, cover the top with another piece of parchment. Take another sheet pan the same size as the first and put it, bottom side down on top of your second piece of parchment. Apply pressure to the top pan until it sits evenly (with a little wobble as possible) on top of your mixture. It works like a charm.

Hey Tom, as I watched you put your muscles into packing in your Nut, Seed and Fruit bars into the pan I heard you say maybe you should have made two smaller batches. Maybe. But before you do once you've turned your mixture into your parchment lined pan quickly add another piece of pre cut and waiting parchment on top, food side down and place another pan of equal size bottom side down on top of the second parchment and push down. The pan will equalize your pushing power allowing you to flatten more at one time. If it is still a bit higher in the middle, ot anywhere, push down there again. That will further spread out your mixture. This method works for me. I hope it simplifies your process.

Awesome! Personally, I would put the nut mixture straight into the hot honey/syrup pan. The residual heat of the pan will give you a bit of extra time to thoroughly mix everything together. Thank you!

Nuts into the liquid, stir with metal spoon. Dump out quickly (no time to scrape the pan) What if you put a parchment paper over the dumped out nuts and quickly use a rolling pin to even out the nuts?

We live in Texas, the home of the original Buc-ee's. They are huge. I think ours has 27 gas pumps and any kind of food you may want. They are known for their very clean restrooms. I think they have someone clean them once an hour. I don't know about these bars that you made. I'm not a fan of most of the nuts you used, except the pecans. I think I'd use peanuts in them but am not sure of what other nuts I'd use. Also, I'd use more and different fruits, like dried pineapple. I know you would say to use what we like, and I thank you for this video.

I'd possibly try this with honey roasted peanuts and honey roasted cashews, no pecans or maybe honey roasted - but no almonds. I might also add dried pineapple. I might switch out the blueberries and craisins with dried peaches. A pizza cutter, the spinning wheel or long knife-like, would probably work better to cut this. It might be a good idea to get some cooking/banking gloves to use when pressing out the mixture.

I don’t wanna give you advice because you were the chef, but since this is the first time that you made them, I think you should pour the nut mixture into the syrup instead of the other way around. I also think that I would make my cashews smaller than that. They do look yummy though I am really enjoying your videos. I hope you have a wonderful time on your trip. You don’t look old enough. They are building a Buc-ee’s near us. It’ll take awhile. When I make toffee I pour the hot candy syrup directly into the pan. No parchment. So if I make these I’ll pour the hot syrup into the pan then place as quickly as possible the nut mixture. I might try a half recipe first on a 1/4 sheet. Costly ingredients. I have found it helpful to score the candy while it’s warm. I use a bench scraper too. When it’s cool I finish the cut…though with toffee it’s more of a break. I’ve been watching your videos the last few days. I plan to make your biscuits this week. It’s sooo hot right now.

Is there a way to add dark chocolate to the nuts without the melting? Dont know how they do it but some storebought granola bars have chocolate chunks without them being melted? Or if there is not a way could you melt chocolate and drizzle on top? Also, that recipe makes a lot-could you freeze them? Just found your cooking show and really like it. Cant wait to ret the bread pudding and apple dumplings. If you put out a cookbook please let us know. Thank you.

I love granola bars and keep my homemade ones in refrigerator all the time. Mine is a no bake , but micro wave honey and peanut butter. The other ingredients are oats, rice krispies, raisins,nuts. Looking forward to make your recipe but need to go get all those seeds & nuts. Yours sound delicious but so is mine but cheaper. GOD BLESS

LOL! You guys are too funny...& cute. What we seen from this angle,(that's why it's so funny), the bottom of your sample bar is loaded with just blueberries & cranberries. So, if you look at the finish sheet, you have everything in sections, all your pumpkin seeds are at one end, etc. Stir your stuff in the bowl before adding the Bondo! But I love this recipe, my kids and Grandkids will love them for work. Thank you so much for sharing, and have an awesome safe trip to Virginia

You crack me up calling it Bondo - cause that's pretty accurate. It sets up fast after you take it off the heat. Another viewer made the brilliant suggestion to add the fruits - nuts - berries to the syrup mixture while it's still hot then transfer it to the sheet. We will try that next time. What is a substitute for brown rice syrup in granola bars? The best substitutes for brown rice syrup are other liquid sweeteners, like corn syrup, honey, maple syrup, barley malt syrup, molasses, golden syrup, date syrup, or pomegranate molasses. You can also use brown sugar. Liquid stevia and fruit puree are the best substitutes for people with diabetes.

We had a viewer offer a great tip. Add the dry ingredient to the syrup while it's still hot cause once it's off the heat it sets up fast! And if you have a heavy cooker like Tom was using it might be a good idea to recruit someone to help with the lifting. I'd do that for sure! Have a great day and thank you so much for watching.

This may not work, but could you pour the fruit/nut/seed mixture into the pot where you heated the honey and syrup? Would not cool as fast and you'd only have one pot to wash with all that stick-um in it! Also, you might be able to get all the goodies out before it sets up, hmmm? Since the pot is hot, you might be able to spoon it out?? Might not work----I was just thinking that was what you were going to do and was surprised that you poured the hot honey/syrup into the cold bowl with the nut mixture. This looks so good. Could it be frozen without getting moist and sticky? There's only me and it would take me years to eat that much!! Love your channel. Just subscribed. You do some things just like I do. I always close up vanilla or anything I measure before I set the jar/bottle down. I notice other cooks/chefs just set jars/bottles down and I tell them to "put the lid on." (Of course, they hear me!!!) I also scrape the last bite out of a bowl or pot. Waste not, want not! I'm old, so I'm thinking you've been looking over my shoulder! I'm rambling! Didn't meant write a novella! Sorry! 😂😂😂

That's a fantastic idea! This was our first time making it since we bought the Nutty Bites and decided we'd try to make our own. Wish we could have discussed this with you BEFORE we made them.
