@TheBreadKitchen11 жыл бұрын
I've found that cooking time and temperature can have a marked effect on the texture of the bread. Next time do exactly as you did before but reduce the cooking time by 10 minutes. Look at it and if it is going brown on the edges you're done. If not, pop it back in for another 5 minutes. :-)
@MelanieCramer11 жыл бұрын
***** Hi! May I make a suggestion? Baking breads in general, do require the racks to be adjusted in the oven. Too close to the heat source (in a standard home oven), will cause the moisture in the dough to evaporate fast. That might have been the potential problem. Also, another contributing factor can be too much flour (baking recipes should be measured metrically), could be not enough water. Make sure to always use fresh ingredients. :)

I have just shoved a vegan version of this li'l beauty in to prove for its second rise and I find myself giddy with anticipation. Instead of Nutella I made a vegan filling out of ground and roasted hazelnut, cocoa powder, vanilla extract, dark brown sugar, golden syrup, coconut oil, vegan marge and a little flour. My hubby begged me to take it away from him or he could not vouch for its survival. If it turns out I will try to send a picture. Thanks Titli!!!

***** O Titlitilitili!!!!!! It turned out soooooo well!. The family got their sticky li'l paws on it at breakfast. Had you been here I would have kissed you and asked you to marry me... it was really that good.But instead I will say a very heartfelt THANK YOU!!! Don't know if you are interested in vegan alternatives but instead of the 2 eggs I used 2 Tbsp of ground flax seeds soaked for about 10 minutes in 5 Tbsp off water and I used soy milk and vegan marge. The dough turned out velvety soft.

Titli, you are my favourite foreign poet. Can you tell me is a bread flour just a fine type of an ordinary flour or is a a different kind of flour? Thank you.
@TheBreadKitchen11 жыл бұрын
Bread flour has a protein content of around 12-13%, compared to say cake flour which has a protein content of around 8%. More protein = better bread.

@MimoTooThanks8 жыл бұрын
+Yusra Khan Bread flour has more gluten which is what makes the dough nice and elastic, you can try but you might not get desired results. Sorry I'm 5 months late hehe.

You need a bread flour with a protein content minimum 12%, preferably 13-14%
@vampyregem11 жыл бұрын
I tried this recipe yesterday, although it worked out in the end (extremely pleased with the results) I struggled to make the dough come together, it was so sticky! In the end I must have added another 100g of flour almost with all that I used to knead and bring the dough together. Is this normal? Thanks
@TheBreadKitchen11 жыл бұрын
Well no. You saw how my dough wasn't sticky at all. Out of interest, how did you measure your milk?
@vampyregem11 жыл бұрын
In a Pyrex jug :)
@TheBreadKitchen11 жыл бұрын
I was hoping you would say that! If yours is anything like mine it is not that accurate. I have a ½ litre Pyrex jug and if I carefully measure 200 ml using the marks I actually get 220 ml. 1 ml of water (or milk) weighs 1 gram - it's much more accurate to weigh liquid for breadmaking rather than rely on the mark on a Pyrex jug. Been there, done that :-)
@vampyregem11 жыл бұрын
Aha! Silly Pyrex, thanks for the tip though, will definitely weigh my milk next time. It came out great, sadly a little dry after all that extra flour. But practice makes perfect and it was a joy to make, thanks!

OK, then you should be able to find bread flour in the supermarkets really easily. Plain flour in the UK doesn't really have enough gluten in it to make good bread.
