Prawn & Halloumi Chilli Pesto Pasta. Satisfaction with every bite and 3-4 p. portions. If you're not on the halloumi bandwagon this is your ticket !!!
Ingredients
- 250g frozen prawns (defrosted)
- 400g fresh pasta (tagliatelle is my favourite for this dish)
- 4 tbsp olive oil
- 3 cloves garlic
- 1 red onion
- 1 pepper
- Juice of 1 lemon
- 1 block of halloumi cheese (sliced)
- 100g basil pesto
- 50g parmesan cheese (grated)
- 1 tbsp of chilli flakes
Directions
- Make sure you take the prawns out of the freezer in the morning, so they are defrosted by cooking/dinner time.
- Start by heating 3 tbsp of olive oil over a medium heat on a large saucepan
- Dice the onions, garlic and pepper and add to the saucepan with the chilli flakes until they become sautéed.
- Meanwhile bring a pot of water to a boil and add the fresh pasta for ~2-3 minutes. Once cooked strain with hot water.
- Squeeze the juice of the lemon into the pan.
- Add the pasta to the saucepan and mix well with all the ingredients.
- Add the pesto and mix through until all the ingredients are covered with a layer of pesto.
- In a separate pan add the last tbsp of olive oil and add your slices of halloumi. Fry for ~2-4 minutes each side.
- Finally add your prawns and halloumi to the large saucepan and you are good to go.
- Grate the parmesan over the pasta to serve.
