Ham El-Waylly is in the studio kitchen making pupusas, a stuffed, griddled corn cake from El Salvador and Honduras. Ham’s version is stuffed with a quick bean and cheese mixture. But pupusas are a great home for leftovers: Squash, braised meat and wilted greens all make fantastic fillings. As long as it’s fully cooked, not too wet and small enough to be flattened into the cake, just about anything can go inside.

Thank Sohla for sharing Ham with us as she launched out of the mess at BA. I like the way Ham coaches us out of the tricky spots - where he thinks we are likely to doubt ourselves. He is a very grounded presence. Combined with Sohla's razor sharp intelligence and imagination, I hope for more content from them, both individually and together.

Hi! I’m from El Salvador, and I want to thank you for sharing our most popular dish with your audience. Pupusas are just delicious, and I’m happy to see more people falling in love with our national dish. If I may, I have a few observations about your pupusas: first of all, they seem awesome. You would lose a lot of money if you were to sell them, though, because your fillings are huge, lol. Too bad you didn’t have any quesillo. It is much better than mozzarella. Secondly, we don’t fry our pupusas. We use a lightly oiled grill to cook them. Sometimes, instead of water, we use a little bit of oil in our hands when we are making the pupusas. That would be enough for it to cook in the grill. And finally, your curtido needed to pickle a little bit more, it was too raw, and we use a very watery tomato sauce (salsita), instead of the green sauce you showed on your plate. All in all, I loved your video. You say the word pupusa perfectly. You showed that it’s a very versatile dish. In El Salvador you can find all kinds of fillings nowadays, from the traditional “revuelta” (chicharrón, red fried beans and quesillo), to squash blossoms with cheese and even shrimps, mushrooms or garlic and cheese. Thank you again for highlighting this very popular dish of our rich Salvadoran cuisine.

YEAH! My mom makes them with oil on her hands and was very confused when he chose to fry them? We're Slavadoran too! I guess that's one new way to try to make them!

Definitely love these notes. Myself and my family use water on our hands, and I didn’t know some people use oil until my mid 20s. The oil for frying seemed a little strange, however I could see it as easier for cast iron skillets (plus frying is always delicious). As far as cheese, mozzarella is more accessible even in some international food sections I’ve “mozzarella para pupusas” more than quesillo, but you’re absolutely right quesillo is amazing.

I’m Salvadoran and have always been fascinated by how the ladies would shape the pupusas before placing them on the griddle. Not many know about Salvadoran cuisine. Ham’s approach is beginner friendly.

First time I had pupusas was 11-12 years ago when I was working as a Janitor for the university while I was studying there. One of the old workers there gave it to me bc she made extras. She was from El Salvador. I already knew what pupusas were, but never tried them up until that point. I fell in love with the dish first bite. Anytime I pass by somewhere that sells em I make sure to grab some

I've been craving pupusas recently, so this video just answered my prayers. I used to live in Logan, UT and there was a really good El Salvadoran pupusaria there. I moved away in 2016 and I still think about those pupusas often. A family from El Salvador owned and ran it and I vividly remember seeing the abuela forming pupusas faster than I could process.

Pupusas made by the Salvadorian tias in the food trucks are a bit thinner, and when they shape them they always do so with a bowl of warm water (with just a drizzle of oil on the inside). Dip your hands occasionally to keep the masa moist but not sticking to your hands! Such a delicious recipe.

@ham, they look tasty and nice to see Central America represented but as a salvadoreño I have to share my critique: they ended up way too thick. With a bit of practice you can get that ratio right, a lot of filling and quite thin coating of masa. The masa often is made with some sort of shortening, Manteca or vegetarian alternative so that the final product is not too dry. The crispiness should come from the cheese (quesillo) which must ooze out to form a burnished chicharrón of cheese on the outside. All these steps are what elevate the humble pupusa to God-level. Also, apart from the curtido the salsita de tomate, a thin and warm and spicy tomato sauce is often added.

About time you post a Latine/Hispanic dish on your KZbin channel! Yall haven’t posted one in more than a year (or prob more I couldn’t scroll that far down lol). We have so much amazing, delicious, and diverse foods - birria, arepas, gorditas, empanadas, tamales, ceviche, enchiladas, gallo pinto, mofongo, ropa vieja etc. Appreciate our foods, they taste ricooo 🫶🏽

Two parts throw me off pan frying the pupusas in oil and the green salsa, I’ve never seen anyone do that and I’ve typically seen a red salsa BUT this recipe looks bomb so I’m up for it.

Ham (and Sohla) love you and your work! I like the idea of combining pupusas and quesadillas de flor de calabaza, I will need to try this! One note regarding your technique: pupusas are not shallow fried, they are griddled. I’m sure following your method you made great stuffed Mexican Gorditas or round fried quesadillas, but not pupusas.

I would call these pupusas-like. (These are way too thick, and they should not be fried.) I've never seen them served with green salsa either. I'm sure they are tasty. 😆 Love Sohla and Ham for sure, but should have had Karla Tatiana Vasquez (SalviSoul) as guest to make real pupusas. Still good that NYT has taken an interest in the Salvadoran national dish.

I can understand the lack of epazote in both fillings because is something extremely Mexican, but the fact that he didn't use onion for the beans is wild to me. Also, thanks to this video I just learn that pupusas are very very-very similar to gorditas.❤

@ham Se ven ricas pero te quedaron muy gruesas. Para auténtica pupusa salvadoreña la masa lleva manteca para que al final queden menos secas. Falta quesillo al relleno que tiene que salirse para formar el chicharrón de queso.
