These Oatmeal Jam Bars are sure to please. They can be made with any assortment of jam or pie filling. I've made them using whole wheat and einkorn flour in the past and they turned out just as delicious. I personally like having them with a scoop of ice cream. Change up spices, extract, fillings, and nuts to create what you like.
Ingredients:
-2 cups all purpose flour
-1 cup oats
-1 cup sugar (can reduce or add according to the sweetness of your filling)
-1 cup melted butter (can add a little more if mixture seems too dry)
-1/2 cup nuts of your choice -optional. (reserve for topping)
- 1- 1.5 cups jam or pie filling - you can really use as much or as little as you'd like
-1/2 tsp salt
-1/2 tsp baking soda
-1 tsp vanilla bean paste or extract
-1 tsp cinnamon (optional)
- Preheat oven to 350 degrees and line an 8x8 baking pan with parchment paper. I like to use binder clips to keep parchment in place so it won't slide around when pressing in the crust- Just make sure to remove them before going into the oven.
-In a large bowl, mix together flour, oats, sugar, baking soda, salt, vanilla, cinnamon, and melted butter until a well combined, crumbly mixture forms.
-Press a little more than half the mixture into the pan, smoothing it out with the back of a spoon, until a nice even layer is formed.
-Spread your jam or filling into an even layer over the base crust.
-Add nuts to your remaining dough , and incorporate using your hands to make larger crumbles.
-Sprinkle mixture evenly over jam layer. REMOVE BINDER CLIPS IF USED
- Bake for 30-40 minutes, until golden and crisp on top
-Cool in pan for at least an hour or bars could fall apart. I didn't wait that long in the video, which is why mine looked a little softer.
-Slice and enjoy!
