I come from a family of hunters my Grandfather is Irish! And my other Grandparents lived through the Great Depression so as a boy it was instilled in me as I began hunting you kill it you eat it the animals we harvested payed the ultimate price their for we will respect it life by not allowing anything go to waste! We eat it all and the organs were always first! Most of my friends wouldn’t come hunting with my family because of the way we handle are harvested animals! Except one of my best friends and he is Native American he was the only one that truly understood what it is all about! Chris as an Italian-American knows this pretty well, since in all europe they show u to eat everything. I live in Latin america, my dad is from Spain and has showed me that we have to eat everything at least once. And yes I know some stuff I wouldn`t eat, not because I don`t want to but because some people don`t know how to prepare it, I went to eat at "Incanto", And it was a meal I will never forget :). We have eat different stuff millions of years, why the change now? :D

I love the way how he says how we are in disconnect with the way we regard animals and the way we think we need to eat certain parts of the animal only. Our education of the various cuts of meat of an animal, and the concept that if we kill an animal, we eat ALL of it, is essential. No waste of an animal when it is killed is more humane.

Fergus Henderson has been championing this style of cooking for like 15 years. This guy owes a lot to Fergus. Also the thing about meat, we should only eat the best we can afford. If you saw the way a pig is not only kept, but how they are born. If it's not free range (and most pork eaten in the USA and the UK isn't) then the sows that produce the piglets basically live their life in a cramped cage they can't walk. Buy free range or don't but it at all.

I have good memories of Tripe when I was a kid. We refer to it as "Tuwalya" which is towel in English because it's got the same feel and look as a towel. As a kid it was a fun experience for me because we get to kid ourselves to thinking that we are actually eating towels. Haha Here in the Philippines we have a dish called Kare Kare and it's basically tripe and other Offal parts in peanut sauce and vegetables. You dip it in "bagoong" which is fermented fish, very similar to anchovies. YUM. Peasant food at it's finest.

Starting on the third of three months living in Budapest, Hu. The Central Market and a market closer to where I live has almost no evidence of styrafoam, You need to bring your own bags. Produce comes from within 100 miles. Lots of animal livers, hearts, necks, tails and heads (fish especially). At this time of year, you get root vegetables, not much greenery. I could get canned vegetables if I wanted to but I'd rather have pickles made on the premises

I was at a friend's house and his nasty ass grandmother made some dirty menudo, and I told her "you think food smelling like shit is normal? I'm not eating that."

Nowadays in developed societies, people are getting more and more difficult in their food choice; I say they should be more open minded in what's out there in the world and stop relying on common fast food. I personally love eating different kinds of food as long as they don't poison you or kill you. Pig tongue with caramel sauce and cinnamon has a rich flavor and I absolutely love it.

I guarantee you I'm more familiar with hipster trends than you are, I lived in Williamsburg Brooklyn, Hipster capitol of the East Coast before they had a Starbucks. It is not "hipster" to consume all parts of the animal, it is actually 'Traditional.' The parts of the animal that you throw your nose up at are the parts that are most nutritious and are part of every culture's cuisine before companies like General-Mills and Nabisco convinced you that there is something wrong with them. By your logic, my 67 year old grandmother is a hipster for beheading her own poultry and preparing fresh gizzards or chicken hearts. My 40-something year old aunt is definitely a hipster too because she ferments her own sauerkraut. Only infants and the uncultured are picky eaters. You're just an ignoramus and you don't respect culinary tradition. The fault lies with YOU, not with people who wish to consume offal. I hope that you grow up one day and your palette develops, because there's a whole world of food out there your toddler tongue is missing out on. I would recommend looking up organizations like Weston A. Price Foundation so you can educate yourself about traditional foods and let go of this silly, sophomoric belief that choosing the foods people have been eating for several thousand years is in any way "hipster."

Offal can be stong tasting,but its not that bad, unless someone doesnt know what they are doing. i grew up on hog lites(lungs,spleen,and heart i believe).I cook cow tongue, beef feet,chicken feet.want to try beef heart ,kidneys.people in many cultures have been cooking offal for centuries and it fell out of favor with a few folks. the sad thing is once a certain food becomes "hip" to eat, it will go the way of pork belly(which is fatback),catfish,chitterlings,hamhocks, chicken wings; which was the "food of the poor" will suddenly jump up in price and one more stomach filler will be expensive for the below average income earner.

I don't think it's that people don't give a shit anymore, most people today are unaware the farm to table process and what that means, could be on a tight budget or both. Also, don't forget social conditioning which plays a huge part in the dining process today. The media (TV) are a very persuasive medium in telling people what to think. Advertising also is extremely successful in shaping peoples behavior and minds. We have a generation or two of people who 'take in' whatever garbage is thrown at them instead of thinking.
