Awesome segment from Hugh. As someone who appreciates offal, I'm glad he's been a longtime champ of head to tail cooking. Speaking of which, it's awesome to see a young Fergus Henderson in there for a few seconds :) The only problem with the segment is the way it ends. If you're trying to sell people on eating more offal, it's probably best NOT to cap it off with a shot of a severed pig's head accompanied with evil laughter.

We have always eaten offal in Russia. I love it. We even eat cleaned and washed chicken intestine - tender and yummy.

To NOT eat the offal is an offense to the animal that has been butchered.....Plus it helps that the offal is some of the most nutritious parts of the animal!

eating offal is common in asian cultures and is still the norm where i come from in malaysia.

its making me want to have some lambs fry and bacon!! but I couldnt eat brain unless it was in a lovely sauce of some kind... and it didnt look like the brain
