Yeah and oil burns are so freaking bad. My cousin's hand is all scarred up from that one time she forgot the oil pan on the stove. And it caught fire. Thank god the house was saved, the kitchen wall turned black.

Yep, steam released from the cooking food can condense on the lid and drip back into the oil. They do make metal or silicone mesh splatter guards you can use instead though! Also, obviously you can't use water on a grease fire but you can't use a regular fire extinguisher on a grease fire either. They have water in them and the force of the mist blasting out will just spread the burning grease everywhere. You have to either cover it with a lid or dump a bunch of baking SODA or salt on it. NEVER flour, baking POWDER(both flammable), or sugar(will melt into molten hot caramel and is also flammable).

@@disintegratesintobinary655 Not sure if anything will happen if nothing is being cooked and it's just oil in the pan. But when there is something being cooked, the water content in the food creates steam which will condense into water and drip back into the oil. Water and very hot oil can create explosions, which is why you're not supposed to put out grease fires with water. Also, as a personal anecdote, I've noticed that most of the condensed water on the lid will drip down when you go to take the lid off, which increases the chance of injury. In this case, where there's no water/steam since they only put oil, putting a lid whenever you're frying can increase the temp of the oil to even more dangerous levels.
