Was just curious cause of the direction of the heat and smoke, like placement if a brisket. Love your cooker by the way

Great cook. I have the same pit and have been playing around with it. I find the hot spot to be just off center due to the downward baffle at the heat exchange between the firebox and the cook chamber. Have you ever thought about removing that baffle all together? I’m tempted to do that (and extend the stack) as my first cooks have shown pretty significant signs of a “bottom up” cooker (burnt rib bottoms). I wonder if it’d draw better if forced into a “top down” direction by removing that baffle given the location of the exhaust at grate level.

I only have burnt bottoms on the side right next to the stack. I do see what you are saying, but I haven't had much problems out of my final product. I have thought about it.

Have you tried any of the Meat Church or Kosmos Q seasoning? They are a game changer.
