The number one tip for anyone using a offset smoker is to get a good hot stable coal bed. This will produce clean heat and instantly get the splits to combust upon adding more without the heavy smoke that can occur with a less stable coal bed. It will also keep temperatures stable and easier to control and teach you how much wood to add and when to add it.

Good video thanks. You asked for tips. This is a mod tip. I removed the baffle and replaced it with a homemade baffle that sends the smoke up, down and through. It's a scrap piece of aluminum about the size of the original baffle with a row of 1.25 inch holes across the top and the bottom. I placed a half brick on the bottom of the cook chamber next to the firebox end, set the baffle on it, about 1.5 inches from the firebox, leaning against the grate. I get uniform temps throughout the cook chamber from end to end. Another tip: Keep the fire/coalbed as far from the cook chamber as possible, up next to the firebox door.

They have modified the all the hinges and added front wheels compared to the older DLX I have. Also, yours doesn't look like it has the baffle, I cut the baffle out of mine and added a shelf to cook on that raises it about 4 inches and added a second thermometer closer to cooking area. For firebox door i added a cool touch handle, I like to use small splits and have two separate fires so I can alternate adding new ones without so much temp spike. Mine doesn't leak smoke, i leave it in the rain and it stays dry. I hope to add a collector and longer stack to it one day

I mean… how creative would you like to be in placing them? Without hanging a few over the top shelf in some really creative way, I’d say a max of 4 but realistically three depending on how you trim them or what size they were.

Yes, BBQGuys has rolled their shipping costs into the price so they can offer “free shipping” whereas ordering through DDR the shipping costs will be added onto the actual price of the smoker. The folks at DDR do a great job working with you to find the best price for shipping if you give them a call.

You don’t have to spend this much money people. I bought an Oklahoma Joe smoker for $350. It’s quarter inch steel and I keep it covered and spray it with Pam spray every now and then. I’ve had this thing for years and it smokes amazing bbq. I ordered the metal plates for it to keep the equal temp in the main cooking chamber. Waste of money! Just don’t. If you’re not cooking like 8 to 10 butts at a time it’s just an over kill for that temp plate. Just don’t.

I live near the Brazos River, this smoker's namesake, and it's pronounced brazz+us, not bra-zohs. I work in Brazos County and have lived here pretty much my whole life. Born and raised. And if you call it a bra-zohs to a local, they'll look at you funny at the very least. It drives me crazy to see video after video about this smoker get the most basic thing, the name, WRONG. It's brazz+us. Like brass, but with "z" and us. Brazz+us! That's the local vernacular. Sorry for the rant.

Fun fact: The locals will not “look at you funny”, but will smile and help you understand how to say by repeating it back to you out of kindness. I’ve been to Brazos County several times, as well as Bexar (“Bear”) County, and Boerne, TX (“Bernie”), etc. And you yourself wouldn’t know how to properly pronounce the unique names of places around the country either, and no one would be driven nuts about it. Live long and prosper, and chill out. ✌️
