come on Summer,,, I have promised to NOT clutter the yard up with another smoker....... Hanging ribs is so addicting that I have to make myself lay them flat at times... Glad you are enjoying that Pro. Even in video you can tell the size difference vs the Bronco... Nice looking ribs... You know little man is growing and 1 of these day's he just gonna reach up and grab him a rib before you get done talking.... Great vid.

Do you use the temp gauge on the bronco? It seems like mine is off by quite a bit.

I do not. I installed a WSM gasket at grate level and I use my smoke x4 to monitor.

In my experience the smaller side tends to break when you hang it if you don’t pull them off in time.

Thanks for a great video. (I've been watching a bunch of your videos lately because I'm thinking about buying the Bronco Pro.) You addressed exactly what I was looking for in a hanging rib video... what's your current opinion on using the baffle plate vs cooking right over the coals? I realize that's the only option with the Pit Barrel Cooker, but I've now seen it done both ways with the Bronco. Less space, but less charring? Thanks!

I personally think they taste better when they’re hung over the coals without the baffle plate in. What I like to do is hang till I get the color I want, wrap until done/tender, sauce, and eat.
