OKONOMIYAKI LOCKDOWN MEAL | OKONOMIYAKI QUARANTINE STYLE | OKONOMIYAKI MADE WITH CANNED SARDINES AND INSTANT NOODLES
Running out of ideas to cook during the lockdown?
Okonomiyaki is a Japanese savory pancake, a popular street food in Japan. Hiroshima Style Okonomiyaki is a layered okonomiyaki that is made with eggs, flour, dashi powder, shredded cabbage, scallions, tenkasu, sliced pork belly (or any protein of choice), yakisoba noodles and topped with okonomiyaki sauce, japanese mayonnaise, aonori and dried bonito flakes.
I'm going to share with you a recipe that you can make at home. This recipe is a modification of Japan's Hiroshima Style Okonomiyaki.
I used what is available inside the pantry ---a canned sardines and a yakisoba instant noodles.

Ingredients: (Modified)
Batter:
1/2 C all purpose flour
1/4 C + 1/8 C water
1 egg
1-2 pinches of salt (season as per taste)
Okonomiyaki Sauce (modified):
3T sardine sauce
2T oyster sauce
2 calamansi (juice only)
1T honey
1T tomato ketchup ( I used the condiment from a fast food chain) :)
1/4 head of large cabbage, shredded ( using mandolin)
handful of bean sprouts
2 stalks of scallions or green onions
1- 2 T of oil (just to grease the pan)
1 canned sardines (i used 3 pcs of sardines, it up to you if you want more)
1 yakisoba instant noodles (cook as directed on the packaging)
1 egg (scrambled)
**Heat pan on low heat setting. (just like you are making pancakes) :)
Use 2 frying spatulas
