Such a delicious but simple ramen! I didn’t have all the ingredients, but I made due with substitutions and it is fantastic! While I waited for my noodles to cook, I stewed cubes of tofu in the soup and they absorbed the flavors so well. Thank you for sharing this recipe! I will be using it so often!!

@@gummysmile9414Sure! I didn’t have chili bean sauce so I used chili oil to get a little heat. I didn’t have kombu powder either, but I have dehydrated wakame so I crumbled some up, rehydrated it, and added those in. Instead of plain white sugar, I put coconut sugar because I like the taste. And it isn’t a substitute exactly, but I have a slight sensitivity to ginger, so instead of grinding it down, I simply peeled a piece of it and put it in the soup whole to get the essence of it in the soup.

All you need, instead of kombu powder, is to put 1/2 tsp of dashi instant stock powder, AFTER the water though, or steep 5 gr. of kombu sheet (about an average palm size) in the water or soy milk, for as long as you can (half an hour at least), and then pour the liquid in on low heat, and return to a simmer as slowly as you can afford. Just don't boil the kombu, because it goes bitter, and even slimy in the long run ! Hope this helps 😊

I'm not sure how easy it is to find, in Japan it's very common because those ingredients are a staple in Japanese cuisine, so they're easy to find in powder form for quick preparation! a stock is usually prepared. if you can't find powder, just buy kombu and make the stock using that! I like to also add dried shiitake.

thank you for the lovely recipe, it tastes amazing and unexpectedly rich given how simple it is. it was fairly spicy for my taste, but I added some cold silken tofu as a topping and it took away some of the heat. classic sweetcorn topping works well with this too, in my opinion. one tiny correction from my side - I don't think 1 garlic clove weighs 10g, for me it was more like 4g. but I think it's not that important as everyone can adjust the garlic / ginger quantity to taste anyhow :)

Hi! Miso is fermented soybean so it's vegetarian. Sambal oelek sounds yummy 🤤 the ramen will taste more like Indonesian cooking than Japanese though 😊

Hi, corean Doenjang is an equivalent, if Korean stores are more common. Or there's also a Thai sauce which is fermented bean based. On the other hand, Chinese fermented broadbeans are much saltier and unrefined, so they can oversalt and muddle the flavor balance.! Hope this helps!

this kombu powder is instant and dissolves so if you want to use the real kelp, better cook in the water to make the broth and put that water in the soup instead regular water like he added

You should use the piece of sheet kelp whole, about two inch long and one wide, and remove after the broth comes to the boil, so it doesn't go bitter... The slower you bring the water to a boil, the tastier the broth.!

It depends on the amount of Doban-jang you use, start with 1/2 tsp per serving, then adjust to your tolerance. The szechuan pepper in it isn't very "spicy" tasting, but it goes a long way on the tummy, better mild than sorry 🤗...!
