For a little better control, you can add a 6" stove pipe damper at the base of your stove pipe extension to retain damper control that you lost when adding the stove pipe. Amazon has a few options to choose from.

Great video brother. I have the Brazos DLX with the same mods. I have NO smoke leaks either straight from Academy. Impressive! No doubt this pit is the best for my money. I have found that at higher temps 350+ there is up to 20 to 25 degree swing across the pit. But if I keep my fire low at 225 or so for slow smoke the pit is closer to 5 degree difference. Use the door open and then close as needed and slide the damper on the door to midway, this is my sweet spot on my pit for brisket. Cheers!

Just got my Old Country Brazos All American a few months ago, very well built and heavy, got a few smoke sessions out it and put some burgers on the grill. Thanks for such a detailed video on the modification.

They sell black steel pipe extensions. I’m not using galvanized. I opened up the throat to the smoke stack with a die grinder and a tungsten carbide bit. The hole on the inside of the cooking chamber leading into the stack is about 4.25”. The stack is 5.25”. I now have a full 5.25” opening from the cooking chamber into the stack. I also opened up the throat from the firebox to the cooking chamber, not much though. This thing absolutely runs a clean fire if you’re using dry wood. Two splits with a coal bed run a steady 225°. Three splits run 275°. Those three mods made a huge difference in this pit. Well worth the time.

I'm new to offset smoking and learning a lot through KZbin including all the recommended Old Country Brazos mods. Three questions. 1. On the temp gauge placement, I know you mentioned 1" above the grate level but how far from the ends? 2. I see you cut the spot welding for the heat baffle to enable you to remove it. I've seen some KZbinrs manually move the baffle up and down until it came off. Do you think that might work since I don't own a metal cutter? 3. I also ordered the Brazos DLX but unfortunately Old Country doesn't make a cover specifically for it. If you have or plan to have a cover for your DLX, what did you order? Thank you and terrific how-to video for newbies like myself!

Thanks for the comment!! As far as the gauge placement from the edges I would shoot for between 4-6” from the edge of the door welds. I did cut the spot welds. You would have to in order to be able to wiggle it to break the remaining spot welds under the grate mounts near the fire box. For me I cut 4 spot welds on the sides and broke the 2 on the firebox side. As far as a cover I haven’t had any luck finding something better than just a normal tarp with bungee chords. It’s a relatively new model so let’s hope they develop a cover soon! Make sure you hit that notification bell, I’ll be updating on how the modifications are working out as I post new cook videos!

I’ve had the Brazos for a year and love it! This video is great, could you reply with more details on the stack extension? I am NOT handy at all, so If I went to Lowes, specifically what would I ask for? Please keep posting, these videos are great.

So what I bought was a 5in duct from Home Depot. They sell them in one length only it’s a couple feet long. Then I bought a 6in-5in reducer also in the duct isle of the store. Then just put them together and insert in your stack.

What did you mean by fine tune the thermometer? Next video?

The river country thermometers have an adjustment but on the back that allows you to adjust the thermometer readings. Not all thermometers are tunable though.

Why get the dlx if you're not using the tuning plates. Isn't that the main difference in that and the regular brazos

Washing it out does not clean out the mill scale. It cleans out the oil they spray in it after built.
