just wanted to let you know Ive made this tonight...just pulled out corn bread out of cast iron skillet.. ( yes used bacon grease in bottom..a little corn in it)all is wonderful..my husband ate all (wont eat greens)wants more while im writing this lol .. blessings

Oh yeah grew up on this stuff. I love it to this day. I saw this on your video list and HAD to watch it :) Thanks for sharing that salting info with your viewers. The salt when cooking also binds chemically with the uncooked protein in the bean, which then prevents your body of using the protein when you eat it, and thus wasted. Salting after cooking doesn't do this. This collards looked delicious too. "Very good meal" Sam said.....for sure!

I loved this meal. I don't mind a veggie meal or a meal with no meat. Many don't know salting the beans before pressuring causes the skin to toughen so I thought I'd share that. You sound very knowledgeable, that's such a good asset when cooking!! TFW and commenting! God Bless, Linda

I wanted to let you know that I've cooked your beans twice now, and they are delicious! The only change I made was adding some chopped garlic and I use all the ham hocks that are in the package because I will eventually throw the extra one out if I freeze it. I just try to buy the smallest package I can from my grocery (there's usually 2/pkg). I think these will be my go-to pinto beans from now on. Thanks for sharing.

What another great video, thank you so much, Linda, I enjoy your videos immensely! I always try to find recipes that a lot of people used years ago that are gone but not forgotten. I'm 28 but I really endeavor to do cook/bake like my grandmother used to, and these recipes are a terrific addition; I'm definitely going to try those potatoes, I never really like whole canned potatoes, but putting it with cream of chicken soup sounds marvelous. It's interesting how moms try new and innovative ways to make bland things taste so much better! I grew up on this meal, and raised my kids on it. - red beans as my mother called them, pintos cooked with tomatoes, mashed potatoes, collards and cornbread. I will definitely be trying those potatoes, and the chili tomatoes in the beans. I am so surprised your beans get soft without soaking, in such a short time. Got to get me one of those new fangled pressure cookers. Mine is the old Presto...had it for 35 years.

Thank you and I have put in a request to my family for a nice gift of a pressure cooker. Well, not good on the crust. I tried a second time and it came out tough and mealy. Pie crust has always been my nemesis. I can cook anything beautifully, but not a pie crust. I am NOT giving up! I will keep trying...going to do a sugar cream pie. Your recipe reminded me of when I made it in the past.

If it was tough and mealy....two things...did you divide up the shortening and leave the 2nd half in larger chunks? Mealy??? You're over working the dough....don't knead it at all just push it together until it stays when you squeeze it . Then you know you have enough ice water in it.

Linda, you sneaky gal! Lol. I can't stop giggling at what you did! Forget about Sam, I saw a Fry Daddy when you moved the camera. I want one, but they don't sell them here. On amazon, they charge a crazy price. I might have to buy one in Honolulu and buy an extra piece of luggage. Anyhow, this is a great instructional video. Growing up, we ate a lot of chick peas and lentils, as Spain's cuisine is heavily influenced by morocco. And the beans were always dry, soaking overnight before pressure cooking on the stove. I've made beans several times in my electric pressure cooker right from the dry stage, and it's awesome! Good to know about the salt. I've never had ham hocks before, but I have a nice little ham bone from Christmas in my freezer. From one of those spiral hams, and it has lots of meat on it. I'm very excited to try this. The entire meal looks delicious. You must be feeling good? The viewer hits on your videos are growing a lot in a short time. Its great to see you uploading so many great recipes. I ordered mine from Walmart.com....try it to see if it's less expensive. That would be cheaper than buying one in Hawaii and buying an extra piece of luggage. Don't you think?? That ham bone will work great with the beans!! I'm feeling good but I do have some concerns about Sam...he's been losing a lot of weight and he's concerned about it himself....but....he won't go to a Dr. so there's no reason to waste my time and energy worrying about it. I'd forgotten about the trip to Hawaii......have a great time! It's next month isn't it? Just call me sneaky pete, lol!!

Hands That Cook he is quite a bit thinner than I imagined. They don't sell the fry daddy at the Canadian wal mart either. On amazon, they are charging over $100 for the fryer, and another $100 for delivery, then I'll have to pay duty. A cheap but sturdy duffel bag will do the job coming home. I will be bringing other things we can't get here as well, so it's needed. Do you have any videos using your fry daddy?

I have a video "Deep Fried Pork Chops" where I'm using the fry daddy. I have a big expensive deep fryer but it's much easier to replace the oil in this fry daddy than that great big deep fryer...but I must admit the expensive one does a better job at frying

My big fryer takes a gallon of oil that must be changed every 6 to 10 uses (depending on what you fry) but anything I've fried in it is to perfection...the fry daddy takes 1 quart of oil and much less expensive to operate. I don't fry that much so I bought the fry daddy as a good substitute BUT the pork chops that are fried to perfection at 6 minutes in the big fryer are too dark on the outside when the inside is done and I took them out of the fryer at 5 minutes....just fyi. so you can decide how much you want to spend.

Do u have to add oil before u cook or does the oil from the ham hock work just as good

Hi Dedira, If your ham hock is small you'll need to add a couple of tblsp. of oil. Adding the oil will not detract from the flavor and it's better to be safe than sorry. Whenever you cook beans in a pressure cooker you must have oil to prevent foaming that could possibly clog up your valves. I hope this helps! TFW and commenting God Bless, Linda

Gotta go to the store tomorrow & get a ham hock! LOL! Looks so delicious! And the potatoes sound delicious. Do you just mix all the in a pot & put the potatoes in & cook until tender? My husband, Leon, is a KY country boy & loves bens & 'taters'. Thought I would try this for him. Thanks for a wonderful fun video!

Collards are seasoned with a little squeeze of vinegar, ham hock, salt, pepper, hot flakes, garlic onion and cooked in chicken broth. Enjoy!!!

Estelle, it's good to know someone else has to cook their beans 55-60 minutes besides me! I've heard from some that say theirs pressure 35 to 40 minutes. I have got to believe it's the hard water in my area. TFW and commenting and God Bless, Linda

Hi Debbie, the cornbread is already on my channel called: Delicious 4 Ingredient Cornbread....the potatoes are so simple...just peel and cook until almost done, drain and 1 can of creamed soup-undiluted 1/3 tsp each of onion and garlic powder...leave the heat low and let them finish cooking with a lid on it OR you can use canned potatoes that you have drained and rinsed 2 or 3 times...simple as that. I'll do a video on the collards sometime in the future. TFW and commenting. God Bless, Linda

Deidira, 2 pounds? = 4 cups of dried beans. If you're using a pressure cooker, I pressure mine 55 minutes. If stove top, 2 or 3 hours if they haven't been soaked. Do not salt until after they've cooked. I hope this helps.

Dedira, you're going to have a whole lot of beans. I pressure 2 CUPS of beans, not 2 lbs. Are you sure you want to cook 2 pounds?? They swell and double.

It helps a lot. I've got a big crew to cook for today. I've soaked em overnight and I'm using 4 ham hocks 2 big oinions. I started it on 45 min and will adjust my time from there. I made sure and didn't fill it past the full line

Oh, ok...let me know how they turn out for you. With that many beans you need 2 cans of the rotel and I think you've got enough ham hocks that you won't need any added oil. The rule of thumb is 1 tblsp of oil for every cup of beans....don't fill the cooker over half full when you do beans. They swell and will over fill the cooker. Just a heads up!!

That's a fine meal Linda. Being from the South, we love cooking like this, the only thing I would do is add milk and no cream of chicken soup. We don't like COC soup in dressing, dumplings or potato soup. To us the COC soup takes the taste of the dish. It's OK because I know many people Love COC soup. Thanks Linda...

I never had pinto beans like that before I've always just put them in a pot and let them go and the cornbread how do you make it mine is made from scratch and turn out hard.im definitely gonna try your way with the country pinto beans it looks so yummy. Thank you and God bless
