This is how biryani is traditionally made: raw rice is soaked in water, combined with sautéed meat, and then cooked until it's perfectly done. Ingredients:
For Mutton Gravy:
• Mutton(Mixed Cut) 1 Kg
• Oil Or Ghee 5-6 Tbsp.
• Dar Chini (Cinnamon Stick) 1 Inch
• Badi Elaichi (Black Cardamom) 2
• Badiyan Ka Phool (Star Anise) 2
• Loung (Cloves) 5-6
• Piyaz (Onion) Sliced 3 Medium
• Adrak (Ginger Paste) 2 Tbsp
• Lehsan (Garlic Paste) 1 Tbsp
• Hari Mirch (Green Chilli) Chopped 3
• Dahi (Yogurt) 250g Or 1 Cup
• Tamatar (Tomato) Sliced 2 Medium
• Lal Mirch (Red Chilli) Powder 1-5 Tbsp
• Namak (Salt) As Per Taste
• Pani (Water) As Required
• Lemon Juice ½
• Garm Masala (All Spices Powder) 1 Tsp
• Hari Mirch (Green Chilli) Slit 5
• Podina (Mint Leaves)
For Rice:
• Rice(Basmati) 1 Kg
• Oil 3-4 Tbsp
• Piyaz (Onion) Sliced 3
• Dar Chini (Cinemom Stick) 1 Inch
• Badi Elaichi (Black Cardamom) 2
• Kali Mirch (Black Pepper) 1 Tsp
• Zeera (Cumin Seed) 1 Tsp
• Pani (Water) As Required
• Namak (Salt) As Per Taste
• Fresh Cream 2 Tbsp
• Brown Onion 1 Small
• Few Mint Leaves
Directions:
o Add Oil, Cinnamon Stick, Black Cardamom, Star Anise And Cloves.
o Crackle The Spices.
o Add Sliced Onion. Cook Until Turn Brown.
o Add Ginger Paste, Garlic Paste And Green Chili.
o Sauté For 2 To 3 Minutes.
o Add Yogurt. Cook On Low To Medium
o Add Tomato And Give a Nice Stir.
o Add Mixed Cut Mutton.
o Cook On High Flame For 5 To 6 Minutes.
o Add Red Chili Powder And Salt.
o Add As Required Water.
o Cover and Cook until Mutton Tender.
o Add Lemon Juice, All Spices Powder, Green Chilli And Mint Leaves.
o Give A Stir and Set Aside.
o Add Oil And Onion in the wok.
o Cook Until Turn Brown.
o Add Cinnamon Stick, Black Cardamom, Black Pepper And Cumin Seed.
o Cook For 2 To 3 Minutes.
o Add As Required Water And As Per Taste Salt.
o Add Soaked Rice.
o Give A Gently Stir.
o Dum For 5 To 6 Minutes.
o Make A Layer Of Rice On Mutton.
o Add Fresh Cream, Brown Onion And Few Mint Leaves.
o Dum For 7 To 8 Minutes.
o Shamsi Biryani Is Ready.
