love love love fried corn bread!!!! But I always have to put finely chopped onions in mine. One of my favorite meals is pinto beans, raw onions and a fresh tomato right out of the garden.

That was so interesting. Thank you! I’m in the far north of England. We don’t really cook with cornmeal here but we have a local griddle cake called singing hinnies. They are called singing because they ‘sing’ when they hit the hot fat on the griddle, and hinny is a local term of endearment, like honey. They are like a sweet fried scone made with butter and lard with currants and sugar. They were cheap to make and a good, filling snack. I have never heard of sorghum! I’ve had to Google it to find out what it is. We don’t have that in the UK. Thanks again Miss Lori. I love to watch you cook.

Great Grandma would sometimes just use a coffee/tea cup rather than an actual measuring cup. That might account for the difference in the number of ounces in a cupfull.

That dear little wire-bound book is hanging together on a wing and a prayer The cornbread recipe I make is from it. I used to make it's corn meal griddle cakes too. With make syrup. Yum. But I think I'll make some to go with some lima bean soup I put up a couple years ago for dinner tonight. Thank you for helping with my menu, Miss Lori. My mother inlaw taught me how to make fried cornbread, they had some white field corn ground fresh, she showed me to put the meal in a bowl, add a little salt and then start adding some water and stirring until it’s like you like it, bacon grease in a skillet and drop by spoonfuls and fry until brown, it’s so good with greens, beans, really anything

Mrs Lori when I was a little girl (I'm 77), my mother made these and called them cornmeal pancakes. I loved them. What I knew as pancake syrup was dark Karo. I didn't know of real pancake syrup. I had forgotten about these. But guess what I'm making for lunch tomorrow? I even have dark Karo syrup. I'm having homemade beef stew for dinner and the rest of the cornmeal griddle cakes with just butter. Thank you so much for taking me down memory lane! Thank you for sharing your special cookbook. You've said ryzon correct its the accent with how one speaks that makes the word different for each of us. I have my grandmother's cookbooks from the late 1890s thru to when she passed 1996 and my great-grandmotcookbooks from the mid 1800s, which came with her from england in 1901 to canada. I've treasured them all my life as my grandmother had and are in immaculate condition as they can be considering their over 100 yrs old. All the recipes are handwritten and were the best as they cooked each up till they died.

Ryzon is pronounced Rye-zen And company information Ryzon Baking Powder was a product of the General Chemical Company in New York. It does not seem to have been produced for very long, though the company still exists today. There were only three editions of a Ryzon recipe book between 1916 and 1918. Feb 8, 2012

Just slather them with butter. Yum. I'm weird. I just put butter on my pancakes. No syrup or anything like that. Just real butter. To me, that's the best! When i make cornbread for chili, I eat a plain piece of cornbread with just butter, no sugar or anything sweet on it.

I’ve had fried cornbread my whole life…my grandmother, then my mother both fixed it. SO GOOD! I’ve made them for years for my family. We always just make cornbread as if we were going to bake it, then fry it in a little oil. Self rising cornmeal mix, egg, buttermilk…..can’t beat it! NO SUGAR!

On my research of risen baking powder it popped up a homemade version 2 teaspoons cream of tarter 1teaspoon baking soda 1teaspoon cornstarch ( optional) Mix cream of tarter and baking soda together in a small bowl. To store, whisk cornstarch into mixture and keep in an airtight container. This makes 4 teaspoons

Oh Ms. Lori love you sharing a good recipe to try, I was looking through an old box yesterday for a carrot bar recipe I hadn't made in several years per my husband's request as today is his birthday. I cried several times looking back at the recipes from family and friends who are no longer with us. After a good cry I really thought about the recipes cards I have I need to do something to preserve them. They put aluminum and phosphates in our baking POWDER today which can cause health problems. You can buy it without the chemicals in it, or make your own. Very few clean and natural baking powders for sale today. Clabber girl is one and some other countries make it that don't allow all of the chemicals the their food that the U.S.A. does. So thank you for bringing that up. I will be buying aluminum and phosphate free or making my own. Usually baking soda, arrow root powder/cornstarch and cream of tartar. This info and recipes are online if you need them. Just type in your questions and scroll down if need be. I like looking at some of the questions underneath the "answers". Sometimes you find even more information. Also, fresh ground corn meal always tastes better also a little sweetness to it. God bless you and yours! I love fried cornbread. My mother-in-law used to make fried cornbread thin and it covered the entire griddle and fried it so thin and crisp. My father-in-law and I used to love it so very much…I sure do miss it. I never could make them because she said I was too stingy with the grease….lol
