Love the kitty!!! I'm 45, my mum used to cook cheap economical but good food in a pressure cooker in 80s Britain. Meat and two veg ruled in our house. I often follow her example sometimes for Friday night dinner (shabbos) cooking a joint in red wine vinegar and ginger to give an amazing sauerbraten. I blend the veg and liquid to make a delicious nutritious sauce and serve with potato kugel. All cooked in 50 mins.

Everything you used is what my grandmother used when she cooked. Most of the time, she made pot roast on the stove. She used her pressure cooker for park chops & scalloped potatoes or Swiss steak. YUM!

+Diane Milligan Thanks for stopping by! Apparently, your grandmother and mine went to the same Tupperware parties. LOL But seriously, this recipe is how my mother did it, and how her mother did it, and you're another of many who have said the same. There are some recipes that seem to be universal, and pass the test of time. We can mess around with them, but we just can't seem to improve on them, and an old fashioned pot roast is one of them.
@Anonymoose11 жыл бұрын
It keeps you grounded when you go back to your roots now and then. Every time I make this it reminds me that the old fashioned ways are every bit as valid today as ever. To me, there's just no better pot roast than how my mom did it, and no better cornbread than a 100 year old recipe in a cast iron skillet. And I've made a meal of cornbread more than once, myself. LOL Thanks, Melissa!

Man after my own heart. Been using, , the old fashioned pressure cookers, for 60 yrs. Have 8 different ones from 4qt to 22/23 qt.....LOVE THEM. My Mom taught me how to use them. Would rather use one of these than the "new" electric ones. The "jiggle" is part of the pleasure. Thank you for sharing
@sewingintrifocals-alisonde77782 жыл бұрын
I figure watching the jiggly rocker on my pressure cooker is a good reason to sit and relax in the kitchen. You shouldn’t leave the pressure cooker unattended anyway. Good time to have tea at the kitchen table and take a break.
@jaredini4 ай бұрын
I dunno why but I don't trust the electric ones. You can't beat the old simple types from the 70s. Mine is made by Tower and bottom pops up with different colours depending on the pressure. Blue for fish at 5lb, yellow for veg at 10lb and red for meat at 15lb. I do my meat on yellow as I'm always a little nervous of pressure cookers, even though I've used them for years.

I enjoyed this being I just got a 6qt presto pressure cooker at a garage sale for $3.00 LOL. Is it true that one should NEVER NEVER NEVER fill the pressure cooker more than 1/4 full?
@Anonymoose9 жыл бұрын
+HighConsciousness1 Somehow I never got a notice for this comment, so a belated thanks! And great deal on that pressure cooker! No, it is not true that you should never fill it more than 1/4 full. Under the "don'ts" in my original owner's manual, it says, "Don't fill pan more than *3/4 full* when cooking certain soups or other food combinations which froth and foam when they cook." I've gotten away with filling it higher than that, with experience, and with foods that I know don't foam up. The critical point is that you don't want stuff to boil up and clog the steam vent in the lid with a chunk of whatever you're cooking. Do that, and the pressure can build up until you blow that safety fuse in the lid, blowing all the pressure at once, and as I've heard, blowing the contents all over the inside of your range hood. You don't want that...
@HighConsciousness19 жыл бұрын
Okay, great - I'll try to keep it at halfway to play it safe - so far I am loving it!!! being I eat a lot of legumes - it is amazing!

That may be true but I had my pressure cooker 3/4 full on this very day and had no problem whatsoever. I am forced to wonder where that story of 1/4 full came from. I had a great meal today of potatoes, carrots, onions, and pot roast. Took me 60 minutes for a 4.5 lb. piece of chuck.

@Anonymoose7 жыл бұрын
Sounds like a great deal! First thought would be to read the owner's manual, to get the basics of operating it. There are a lot of variations between brands. They're not tricky or especially fussy, but you just want to be sure you're doing it right. If it doesn't have one, odds are you can download it online somewhere. Armed with the basics, just start using it. Watch some tutorials and video recipes right here on KZbin. And if you're in the mood for the best old fashioned pot roast ever, try this one. :-)
@swicheroo17 жыл бұрын
Okay. I'll bone up on the manual (which was included!). My wife got made when I showed her it. And she wants me to throw it out...but I want to show her this can be useful and make summer cooking easy on the air conditioning bill!
@Anonymoose7 жыл бұрын
It's that much more of a bargain if it came with the manual. It's also an indicator that it was likely well cared for. Or one of those Christmas gifts that never got used at all... One of the best things about them is the time they save. Like pot roast in under an hour, instead of steaming up the kitchen for three hours. And the red beans and rice recipe I did recently in 45 minutes, instead of nearly three hours. The less time you spend steaming up the kitchen, the happier your A/C will be. And it lets you cook meals more often that you might not do often because you don't have time to let them cook all day. That might get her attention. LOL Have fun with it.

Thanks for the good ideas. I make an awesome Jerk Boston Butt in the pressure cooker but haven't tried a Pot Roast yet and didn't want to mess it up. I was unsure on the cooking time. I'm going to use the same procedures except I'll use some tomato paste with some beef consume in addition to the beef stock. A few sprigs of fresh Thyme instead of dried. Add the carrots and potatoes and cook for 15 more minutes. Release the pressure from the pot and add a bag of green peas. Cover and let rest. Once cooled down remove everything, strain the juices, add some flour for the gravy. Mix all of the meat and veggies together along with lots of the gravy! Now that's a Pot Roast!

LOL! A diving board. There's plenty of diving to be done, for sure. It's good stuff, Larry! I'm surprised at how many people don't use pressure cookers. For some reason they seem to have gone out of vogue.. My mother and grandmother both had big ones that they used for canning as well as feeding the families, and my mom gave me this one when I moved off campus and started cooking for myself in '65. It has a LOT of miles on it, and even the gasket is original. I have the owner's manual, too. LOL

Haha! Between the two of them, they do keep a watchful eye on me. I've used canned milk in cooking and baking for many years, and it works beautifully. I rarely drink milk, so I don't keep it around because it'd spoil before I used it, but cans of Carnation in the pantry are always ready and fresh.

Pressure cookers are definitely good with stews and soups. Bean dishes, too. I've done assorted meats and roasts in the Crock Pot, and this recipe would probably do very well. With the pressure cooker, though, the high pressure and high temperature steam (it runs up to well over 250°F) both tenderizes and fuses the flavors in its own special way. Both ways will give good results, but IMHO the pressure cooker version is better.

I used a lagostina stainless old school pressure cooker the other day with about 3 lbs corn beef, filled it to just above the meat with beer and beef stock, got it going on medium and when I came back an hour later the liquid was all gone and I burnt it ,the weight of my pressure cap is only 59 grams . What did I do wrong , looked like all of your liquid was still there, what did ya mean by set it for 15 lbs with the weight ? :-(
@Anonymoose8 жыл бұрын
I'm not familiar with the Lagostina brand, but it sounds as if you either didn't have it sealed, or you had the temp set way too high. The whole point with a pressure cooker is that it's a sealed, pressurized environment, and almost no liquid escapes. By 15 pounds, I mean 15 PSI, or 15 pounds per square inch, which is the pressure maintained inside. My pressure cap has three settings, for 5, 10, and 15 pounds, and I was using the 15 pound setting. When the cooker pressurizes, the control will jiggle a little periodically, releasing any excess pressure as steam, and maintaining the pressure inside. The only liquid that escapes is that small amount of steam when the control jiggles. And you adjust the burner down to a heat level *just* high enough to make that control jiggle briefly, once or twice a minute. Best advice for specifics would be to read the manual that came with it. If you don't have it, you could probably look it up online.
