My mom was an old SE DC girl, grew up in the District of Columbia in the 1920's. She taught me with yellow corn meal & flour, and some sugar to make "Johnny Cake", baked crispy in a cast iron skillet. A cold winter day after shoveling snow, with a bowl of homemade beef stew and crispy cornbread, was heaven on earth!

I did not grow up with the sweet cornbread either. I was born in Georgia, grew up with my grandmother and mother's good home cooking. Love some good cornbread! Have with butter, beans or glass of milk. Oh yeah!

I grew up eating the non-sweet, white cornmeal cornbread. No eggs though and we sizzled the grease before adding the mix. Delicious with soup beans. My family comes from eastern Kentucky. Also my dad loved to crumble the cornbread into a glass of milk with salt and pepper.

Hey Tammy Massachusetts born and raised. Sweet cornbread about 3 times a month. Made with Quaker yellow corn meal, regular ap flour with baking powder and soda added. enjoy it, but sure rather no sugar. Our beans were always Boston baked, so they were sweet, and the corn bread was great with them. Moved to NC 28 yrs ago and discovered southern cooking - and absolutely LOVE it!!! Never had grits, sausage gravy and biscuits, or pinto beans with savory corn bread. Discovered what I had been missing! Absolutely adore your channel and thank you for all the great recipes. 7+ decades on God's great earth, and you teach me new tricks! love ya!

I make cornbread just like my mother, grandmothers, and great grandmothers! NO SUGAR, cornmeal, buttermilk, and shortening. No egg either. Cooked in cast iron pan! I am from Greenville, South Carolina, and my mom and dad were born in Iva and Starr, SC (down below Anderson SC near Hartwell, Georgia!! I do love cornbread with my vegetables and soups!!!

My uncle was from Mississippi and his mama’s recipe did not include sugar. But when we had cornbread and milk we added a tsp of sugar. Oh for the days sharing cornbread with my uncle. Brings tears to my eyes and heartfelt memories.

Born and raised in Savannah. We ate both Jiffy sweet cornbread and White Lilly Cornmeal Cornbread. My mother and grandmother liked to crumble it in a cup of buttermilk for a snack before bed. I like both kinds but I never learned to like either one crumbled in buttermilk.

Hi Chris and Tammy yes I grew up eating cornbread Black eyed peas fried Green tomatoes fried squash fried okra!!😋 Cornbread is one of the first things my mama taught me to cook!! No sugar!! We always had a garden!! Nothing better and fresh vegetables and oh yeah cantaloupe and watermelon!!!YUM!!🤗

I was born and raised in Savannah. My grandmas were from Girard GA and Fitzgerald GA. They used Miller’s cornmeal and always made crunchy cornbread in the iron skillet with butter melted in the bottom of the skillet . Buttermilk was used and it was the fluffiest crunchy cornbread. You can’t buy millers anymore. But I am going to try White Lily cornbread mix.

I’m from Georgia, right outside of Atlanta. My grandmother & mother made amazing cornbread, but NEVER added sugar!! It was considered blasphemy to even consider it lol. To this day, I make savory cornbread only in my grandmother’s cast iron skillet that was passed down to me. I can vividly recall my grandmother AND my mother (responding to the sugar debate) saying if you want cake eat cake. If you want cornbread eat cornbread.

I am from the lower eastern part of West Virginia…coal mining country. My Granny always made a savory cornbread in her iron skillet. It made for big slices of cornbread! I think she made hers with a little bit more flour in hers but nothing like Jiffy.

Yes Tammy! I am in the midlands of SC. We grew up with Savory cornbread too, but we used white SR cornmeal not mix. It would be a sin to put sugar in our Southern Cornbread! 😂❤

Learned to make cornbread from my KY Granny. We lived in TN when i was born. Bacon grease & a little cornmeal sprinkled in a cast iron skillet. Heat in the oven till grease is smoking. Always used Martha White Self-Rising Cornmeal, yellow. 1 egg, a tbsp of melted bacon grease, & buttermilk till it looked right. Pour it in that smoking skillet, & heat that sizzle!! That's making that good, crunchy crust around the edge. When i pull it out the oven, i immediately turn it out on a wire rack. That keeps the crust crispy. If you leave it in the skillet, it'll steam & get soft around the edge.

I’m from western North Carolina. I’m as country as “cornbread “. That’s the best cornmeal mix I’ve ever had. I love White Lily. Sometimes my husband and I will have cornbread with milk and sliced vidallia onions for supper.

My grandmother from Connecticut lived (prayerfully) to 100 on johnny cakes / journey cakes / cornbread pancakes! She continued in Calif after all 11 children were grown and most married. I had rarely had it except the sweet type when Marie Callenders restaurants opened in Calif. But I cooked all types when I had my own family. ❤ ps..You look so cute today.

I grew up in Texas and we also ate savory cornbread from an iron skillet. We never, ever put sugar in our cornbread. My husband grew up in Louisiana and they ate sweet cornbread because they often ate it for breakfast with milk and syrup. Interesting how different parts of the country use different cornbread recipes. We ate ours at every meal and for a meal with homegrown tomatoes and fried okra. Yum

I grew up eating the white corn bread. Sometimes Momma would put an egg in it and buttermilk if she had it to spare. 10 of us kids she had to stretch everything. But give me a plate of pinto bean and onion and a big piece of corn bread with butter and a glass of milk. I am from north eastern Tennessee.

MY momma would fix her a glass of buttermilk and a piece of cornbread and crumble it in her buttermilk for her snack at night after apot of great northern beans and cornbread for supper,we love our cornbread.thanks tammy❤😊

I grew up in Eastern Kentucky and I never had sweet cornbread till I was grown and living in Columbus Ohio. I was surprised and amazed by sweet cornbread! Lol, sometimes I make sweet cornbread and other times I make savory cornbread. My dad refuses to eat sweet cornbread whatsoever! Lol

Grew up on my Mother's Tennessee buttermilk cornbread. No sugar, ever! My Mother also made her stuffing with buttermilk cornbread. It was legendary with family. ❤

Southeastern KY here. Three Rivers cornmeal is a must. Otherwise same ingredients as yours and the cast iron skillet had to be smoking hot with a little cornmeal thrown in the grease first.

My mama put sugar in her cornbread, but, it wasn’t extra sweet..she also put cornmeal on the bottom of the skillet!! She made the BEST cornbread ever!! Now, I can make just like her..❤️I recently made fried green tomatoes, using my buttermilk cornmeal, and they were SO DELICIOUS!!

Down in South East Texas, my Mother made savory cornbread in her cast iron skillet just like her Mother from Louisiana taught her. Sugar was never added. (but cornbread and milk / buttermilk for breakfast was compulsory!)

I grew up in Atlanta but my parents grew up in North Carolina. We always had cornbread made with white cornmeal and buttermilk but no sugar. It was delicious! I make mine the same way.

My family here in Oklahoma always put sugar in our cornbread and heat up the skillet in the oven while mixing it up. Always used yellow cornmeal. I learned from Tammy about White Lily cornmeal mix. It’s the only way I make cornbread now. I have to order it online and it’s totally worth it. I’m still heating the skillet and adding sugar. ☺️

IF y'all really want crunchy, crispy cornbread, do this: Add 2 - 3 TBLSP of any type oil you like. (Vegetable, olive oil, etc.) Put in bottom of clean and dry cast iron skillet. Preheat oven to 475°. Pour batter into skillet when it's reached 475°. Turn oven down to you standard temperature. Now ..... THAT is the BEST crunchy cornbread EVER. (My mom was born n raised in the very southeastern hills of Kentucky. She always made her cornbread that way. ❤

My Mom was from Arkansas and she did not put any sugar in her cornbread. She called cornbread with sugar “yankee” cornbread. We lived in Indiana so the brand of cornmeal mix was Martha Whites, we could not get White Lily. I personally just love cornbread, sweet or savory. 😅

My children’s grandmother mother was from Aragon Ga.Grew up there and she had a brother who lived on Collard Valley Road. I was raised in Summerville Ga where my sister-in-law taught me to make cornbread the way I still do. White Lily Buttermilk mix, flour, buttermilk, shortening , egg and sugar in an iron skillet and my family love it. I have been making it that way for almost 60 years.Not the way my mother made it but we liked it better the way I make it. Seems like most people make it a little different. Everyone’s taste is different. I try some of your recipes and most are about the same as mine. Guess it is just the North West Georgia way. Have a blessed day.

I’m from Mobile, Alabama, but I live in Lucedale Mississippi now, but we always grew up on a savory cornbread. We never had sweet cornbread because we would use it for dressing and so on but now I’m older. My mom decided she liked a little sweet at her cornbread so I would add sugar or jiffy mix.

We never mixed our corn meal with flour and never used sugar. Baked it in the skillet. We had ours in beans or potato soup. So, we wanted it a lil dryer and crunchy crust.

My mother never put sugar in her cornbread. I was told that was called 'Yankee sweet bread'. Anyway, I'm from south carolina. Always enjoy all your post.

I pre-heat my skillet and add bacon grease. Once it is hot, you'll hear the sizzle when you add your mix. Then add a sprinkling of fresh cracked pepper to the top.

I am from Memphis, Tennessee and my mother didn't use sugar in her cornbread. Sometimes I add it because my husband likes it sweet, but I don't add it when making it for dressing. I love it with buttermilk! Thanks for sharing your recipe!

I’m from souther West Virginia and I grew up on savory cornbread too. Never had sweet corn bread until I got married. My mother in law was from Virginia and she made yellow corn bread with sugar. First time I ate her cornbread I thought it was cake!

I am in North Carolina when I was growing up my mother used plain corn meal not corn meal mix to make cornbread but later on she started using the mix .I make my cornbread with corn meal mix that's about all they have in the store now days I make it the same way you do only I don't put oil in it just butter, no sugar

I order my cornmeal from The Old Mill as it’s become a family favorite and heat my skillet up until it sizzles when I pour the mix. It just doesn’t feel right to me doing it any other way but I’m sure the outcome is the same.

KY, and I make yellow cornbread with just a bit of sugar. I only use cast iron to bake, and I swear by preheating my greased iron skillet for that crunch.

When you’re eating all that corn and flour a pinch of sugar is the least of your problems. Your digestive system converts all that corn meal mix into sugar anyway. Look it up if you don’t believe me. It does not help to use shortening which is very inflammatory. Please look up anti inflammatory diet and see that’s what you probably need to focus on.

This is exactly how I learned to make cornbread! My Mother, Grandmother and Great Grandmother all made like this. Now my children do…. We’re from North West Fl the Pensacola/ Milton area. It’s the best! I love to have left overs and crumble it in a glass of cold milk. My husband likes to crumble his in Buttermilk.♥️♥️

I would love to buy White Lily cornbread mix since we do not have it anywhere around here but on Amazon it’s highway robbery. 14$ for one 5lb bag. I can’t even find Martha White around here. Grrrr

If you can't get self-rising cornmeal mix, improvise by adding flour to meal. Also add baking pwdr.

THANK YOU😊 My dad used to make cornbread. He was from the south. His looked like what you made. It was crunchy and held up when dipping in stew, soups, and chile. After dad was gone, my mom, who was from the east, never got the hang of it. I've tried to make it, but around here, upper Midwest, it's yellow cornmeal more like cake and sweet. I'm going to make yours, and I know it's going to be what I remember from my dad.

Absolutely NO sugar! My family and many friends from Georgia, Alabama and Tennessee don’t put sugar in their cornbread. By the way, we are all in our 70’s.

I add packets of Sweet N Low to my cornbread batter. 2 packets for a touch of sweetness, up to 6 for definitely sweet. Depends on my mood or what I'll be serving it with. I heat my cast iron skillet in the oven with a couple tablespoons of butter in it while I make the batter. Always get a crunchy crust that way. Yum.

I have used sour cream in my cornbread and Its Delish !!! I have also made buttermilk by adding vinegar to whole milk ,it works but not as tastey as buttermilk ... I live in S.C. and savory is what I make ,Mama ,Granny and Great Grandmothers too!!The only thing that we do not add is sugar !! My husband likes crumbled cornbread with buttermilk ...Hope You and Chris have a great Sunday !!!😊

My best way to eat cornbread in Pratt City, Al is to drizzle sweet potato syrup and melted butter over it. Now that will make you bite the top of your mouth.

Using the tools Gods gave you! Clean hands! I am from central North Carolina but live near the southeast part of the state now. I grew up with a non-sweet cornbread and still love it that way. Cheese and jalapeños are good in it, too. Don’t put sugar in mine! Just give me some good soft butter. 😋

I use bacon grease. I do heat up my skillet and bacon grease. When I pour my cornbread mix and I hear it already frying I can't hardly wait for a hot slice of delicious cornbread slathered with real butter.

Hi Tammy & Chris, I was born & raised in the suburbs of Chicago and the only time I ever ate cornbread was when my mom made chili. And she just made the sweet Jiffy kind. We are of Italian heritage so cornbread was never our thing, (although I do like it and would love to try your recipe!) However, Italians do eat a lot of Polenta, which is made with cornmeal and depending on what part of Italy you’re from it can vary greatly on how it is prepared. (Just like the cornbread in the south varies from region to region, state to state.) 😉

Grew up in western Piedmont NC, using cornmeal from the “mill”, my grandma did not add sugar. Used buttermilk and baked in a black cast iron skillet! I use sour cream in mine and have added a small can of creamed corn.

Here in Blue Ridge, Ga, We used Cornmeal, Lard, and Buttermilk and that was it. It was the Best tasting Cornbread you could find about anywhere! Thats the way I still make it. Mamas nor mine was ever crumbly! Sometimes using oil would make it crumbly! We never added Butter, Sugar or any Oil. Just Lard or Shortening, Cornmeal, and Buttermilk... Simple recipe and it was so good! Wasn't dry, crumbly or anything but Delicious! I think people use more ingredients than they need! Try it Simple and I bet you'll love it! Its all in what you want cause everybodies different. Cook you some Pinto Beans with a piece of Fatback or Pork or some Ham. Cut you a Chunk of onion and sliced tomater and thats a great meal... Season your cast iron when you're done cooking and they won't stick, rust or look dried out! Keep them in great shape for many life times! I've got my Grandmaws, Mamas and my own! I'm in my late 60's and my cast iron still looks new! Every size of pan that made and Dutch ovens... Nothing like Cast Iron and Food taste so much better!

Dear Tammy, White Lily has two cornmeal mixes. You showed the buttermilk one and still added buttermilk. Do you also recommend the White Lily plain cornmeal mix?Can I use yogurt instead of buttermilk? Thx💕

Growing up, cornbread was made with yellow cornmeal, no sugar, and lots of cracklings. I grew up and live in southeast TX.

I grew up eating cornbread without the sugar. My momma made it like you do. It was so delicious. Yours looks fabulous!!

Amen on no sugar in the cornbread. Yuck. I'm going to try your way on getting crunchy cornbread. I'm from Atlanta, but moved to Seattle 16 years ago. No White Lily products here, but Albers makes good cornmeal and I make it from their white corn meal. Love your show. You're my go to on how to make something, and ya'll are so nice to hear talking like we Southerners talk. Nothing like our accents up here, and sometimes I think people act like I'm from a foreign country when I talk.

My mother was born in in South Carolina and my father was born in North Carolina. She always used the white cornmeal.

I never had cornbread till I was a young adult and. Friend of mine on the racetrack in Kentucky made red beans and rice and cornbread and invited me to dinner I was like oh yummy… I believe she made the yellow kind.. she used to make corn fritters too…

I lived in Ohio growing up and my mother NEVER put sugar in her cornbread, and it was usually served with a big pot of Great Northern beans cooked with a ham bone and sliced onion! She also never added sugar to potato salad, egg salad or biscuits. My mom-in-law, to my knowledge, never fixed cornbread or biscuits, but ALWAYS added sugar to potato and egg salad. She was from upstate New York. I still prefer the savory versions of all of the above!

We ate savory cornbread using Martha White self rising cornmeal mix. Tennessee. Can’t remember when I was a very little girl in NC. I do admit that now when I make cornbread, I’ll a some sugar just cause I like it sweet. My grandmother is rolling in her grave every time I do. 😂 Love your channel & your new kitchen. I hadn’t seen you in a while…not since you moved.

I do not use sugar in my cornbread but I also don’t use flour, and all of the mixes have flour in them. I prefer yellow cornmeal but have lived in the south for many years now and it’s hard to find yellow down here sometimes. Just a personal preference, I suppose because that’s what I grew up eating.

I always have made cornbread using just the self-rising cornmeal mix and buttermilk. And just some Crisco to grease the pan. Nothing else. No eggs or anything. That method has always turned out delicious for me too. But I might try your version as well :)
