Tom’s Country Cornbread
a heaping spoon of bacon grease for the skillet
1/2 cup butter, melted
2 large eggs
1 cup buttermilk
1/2 teaspoon baking soda
1 cup self-rising cornmeal
1 cup all-purpose flour
1/2 teaspoon salt
Preheat oven to 375°.
Using a medium sized cast iron skillet, melt a heaping spoonful of bacon grease in the skillet by placing it into the heated oven.
Melt the butter in a microwave safe bowl. Whisk in the eggs. Stir in the baking soda and buttermilk. Stir in the cornmeal, flour, and salt.
By now, the bacon grease should be hot and melted in the cast iron skillet. Carefully remove it from the oven and slowly tilt skillet around so the grease coats the sides of the skillet. Leave any extra grease in the skillet.
Pour in the batter. Bake for 40 minutes, or until the middle is done.
NOTE: If you don’t have a cast iron skillet, an 8-inch square baking dish will work just fine.

I'm of the NO sugar in cornbread camp. I do not eat it, if it has sugar - that's dessert for me. Your recipe is like mine, down to the iron skillet and jar of bacon grease. I love a good "wheel" of cornbread with summer vegetables! Plus, a leftover piece, heated just a bit with butter, for breakfast with a cup of strong coffee on the side (I got that from my Daddy).. Yum.

When I started watching this video, I thought to myself, please let that jar be bacon grease. So pleased. My mom's family was from Alabama, and so I was raised on southern food. I love cornbread and now I make it for my family. I live in Idaho now, and here they put sugar in it. It tastes like cake. I'm a purist when it comes to making cornbread, and so no sugar. I admit I looked at your recipe before you even started and was so happy not to see sugar in your recipe. My favorite part is the crust.

I’m a dyed-in-the-wool cornbread lover. However, I wasn’t raised with sugar in it, but I would never turn away a slice just because of the sugar!! I could eat cornbread every day. In fact, sometimes for supper I only have cornbread and milk. We had lots of that for supper as a child because that’s all we had. So, I love it to this day!! I use White Lily Buttermilk cornmeal mix. It’s my all time favorite!! 💔🙏🏼🐾🙏🏼💔

I’ve never seen southern referred to as sweet. My mother would put a tablespoon or less in the batter, sometimes She also used bacon grease rather than the butter. She would get the cast iron skillet smoking hot with the grease and pour the batter in. The sizzle was so good to hear and mom always had the best most crunchy crust I’ve ever had. You had to hear the sizzle! Haha!

That’s how my Mamaw taught me how to make it 50 years ago. I don’t understand why people are putting so much sugar in it to make it as sweet as cake. I was told the little bit of sugar was to help keep the cornbread moist and tender and maybe cut the acidity in the buttermilk just a bit. I’ve had the dense cake like cornbread that was really sweet at a couple of schools and restaurants that were not in the south and it’s not good for anything. Mine is light and has a crisp bottom because like you I get that cast iron skillet sizzling hot before I add the batter. I also only use one egg and just a 1/4 cup of oil in my batter. I know everybody loved my Mamaw’s cornbread and they sure like mine because it’s exactly the same as hers.

True southern cornbread! That's how I make my cornbread except I haven't used bacon grease for a long time. But I set my oven at 425° it doesn't have to cook that long. I don't time it. I watch it and when it's a little brown on the edges and the top is cracked. Also I heat my iron skillet on the top of the stove. I pour little of the hot great into the mixture. I pour the mixture into the hot skillet on top of the stove. It sizzles and that's what I want..a nice crunchy crust. Then I bake it in the oven 425° and watch it until there's a nice browning on the outside of the cornbread and the top is cracked.

Love regular cornbread! I was raised on it. Momma would make a cake of it in the iron skillet, set it on the table with sweet milk and that was supper! You just crumbled the cornbread in your bowl and pour the milk over it. Delicious! Still love to eat it that way! Thank you for your recipe. I’ll try it!

Me, too! We had cornbread a lot. Mama even liked it with eggs for breakfast. I do too! No sugar! I follow the recipe on the back of the White Lily Corn Meal mix. Wonderful!

Y’all need to crumble up some of that cornbread, once it’s cool, into a cup or bowl, pour some milk over top, and eat it with a spoon! It’s delicious! I adore your channel. Thank you for the recipes.

👍 i didn't grow up with sweet corn bread. My father did not like sweet cornbread. His. Mother always added a onion to her corn bread. I do too sometimes, especially when i do cornbread for dressing, it adds flavor. Yes we save our bacon grease, i freeze it too. My Andrew makes the best cornbread, he always use a cast iron skillet. He only use that for cornbread. We was always told have one cast iron skillet for cornbread, never use that skillet for cooking anything else, well we have several castiron skillets for different sizes of corn bread. But we have added sugar to yellow cornmeal for certain dishes. No we don't eat cornbread everday, but we have some kind of breaf or rolls. We eat more cornbread with nrans,peas,greens.. God Bless. I grew up like that, no sugar, I have a 10 inch iron skillet all I use it for cornbread, I use the Martha White like you but always taught to use SR flour, no eggs and no soda but I am going to try your recipe because the last few times it was crumbly.re is always buttermilk in my fridge. I cook and bake a lot. thanks for your videos, been cooking for 50+ years but I have learned some things, from you

That is my mother's recipe right down to the baking powder and buttermilk, lol. I still cook it this way sometimes and sometimes I use the box mix. My wife does love my cornbread mixed in with sweet milk. So do I. I love buttermilk also. I buy a qurt just like that every time I go to Walmart. Needless to say, my family doesn't like buttermilk so I don't have to share it. Great video & recipe. Thumbs up. Stay well & safe. Btw, Have you ever heard of Stickey Bread? My sister use to make it. It looked like this except the bottom crust was thicker & the crumbs stuck together when you break it apart. Sadly she passed away before I could get the recipe also.

I'm not sure if this is what you're looking for, my Grandmother made her cornbread like this recipe but when she put the iron skillet into the oven to melt the grease she also lightly sprinkled cornmeal over the grease. This would just about start popping when she'd pull it out of the oven and immediately pour the batter in...it would sizzle and bubble around the edges. Bake as directed then when done, take it out and flip it onto a platter which will show that golden crunchy top that is just waiting for a good slathering of butter!

I grew up in SC with unsweetened cornbread and flat biscuits, the way Daddy wanted them. Once I discovered sweet caky cornbread and fluffy biscuits, I was hooked! I don't make them often. I also think it has to go with the meal (like chili). My husband (who's from WV like you) would like bread with every meal. Years ago, I think we had cornbread or biscuits every day to fill us up cheaply. Some nights, we only ate cornbread broken up in a glass of milk.

You may already do this: spoon your flour into the measuring cup rather than using the measuring cup to scoop the flour out of the bag. Otherwise you may be getting too much flour. Hence the need for more buttermilk. ❤ your videos!

Your cornbread is almost like mine. I use self rising flour instead of all purpose, so I don't need the added dry ingredients. You are right, low fat buttermilk does not work for good cornbread. You need the full fat! One thing I never do is cut my cornbread in the skillet. I always turn mine over onto a plate. For my family, the bottom is the best part and they want it crunchy instead of the heat/steam making it soft. I live in Ohio now and most of my Buckeye friends use Jiffy Mix Cornbread Mix and RAVE over mine. I call theirs CAKE! LOL Blessings to you and Melissa!💝

I live in ohio too. Have lived here since I was 4yo 49yrs. Yes most people Ik here use jiffy. Tbh....I've NVR had any other cornbread by have always wanted to try homemade...guess ill be making toms cornbread asap. 😊

I grew up eating cornbread, Pinto beans, and fried potatoes for dinner most nights. And I love it to this day and so do my grown children. But my husband grew up in the city and I still can't get him to eat cornbread or biscuits and gravy after 50 years of marriage.

When I stayed with my Mamaw and papaw as a kid she would ask me what I wanted for supper. Many times all I wanted was cornbread and peas, they could be black eyed peas, purple hulls, crowders or just field peas. She always cooked two or three different meats and three or four different vegetables and either fresh biscuits or cornbread but she would always make peas and cornbread just for me. I can’t begin to tell you how much I miss those days.

I love cornbread with beans, soups & stews. Your recipe is very similar to mine except for the baking soda. I'll try that next time.😊 I also make mine in a cast iron skillet with bacon grease except when I'm making it for dressing. Then I use a sprayed cake pan or 9 x 13 baking pan because I don't want it crusty for dressing. That's the only time I like my cornbread soft. Give it a great flavor ! I sprinkle aTbsp or so of the cornbread mix on top of the hot grease makes a crunchy crust that way !

Growing up my Gram had several cornbread recipes , without sugar for stuffing; added jalapenos & shredded cheddar for serving with chile and Johnny Cake, cornbread with added maple syrup and either brown or white sugar which did taste like cake especially when served in muffin cups. Thanks for reminding me how much I enjoy corn meal for baking.

This is what I needed to make the dressing.. I have my mom's recipe but you having you to follow helps a lot. I want to find your sweet cornbread recipe and use that to make jalapeno cornbread.

Tom suggests adding between 1/2 to 2/3 cups sugar (depending, of course, on how sweet you're wanting it) to the recipe if you want sweet cornbread. Good luck with the jalapeno cornbread! And thank you so much for watching! We appreciate it.

Suggestion: if keep an empty bowl at prep area, would save time if put all cups in it & utensils as you empty them, will not make several trips to sink with each empty cup as you use. Also I have seen many cooks immediately dump/flip baked cornbread out on a plate upside down. Starts it to cool for cutting to serve. Love crusty edges bacon grease makes.

I've always put bacon grease in my batter and used bacon grease in my cast iron skillet 🍳. I had to try butter since that's what you use. I'm sticking with the butter 🧈!! Still use bacon grease in my skillet but love love love the butter in the batter! No sugar, though 😅

My mom had a recipe given to her from her grandmother for southern fried cornbread. I! guessing it goes back over 100 years. Paula Dean has a similar recipe I found years ago. My mom's recipe was: 2 cups of cornmeal (white) in a liquid measuring cup. Then she filled it to the top with flour. I think that ends up being about 1/4 of a cup of flour. 1 tsp of salt and a tbsp of baking powder. If she was making stuffing, she added an egg. Add water, a little bit at a time, until it ends up with the same consistency as cream of wheat. Fry in bacon grease in patties so that you can flip them half way through. Cook each side until golden brown. Super crunchy on the outside and moist inside. Very dense but amazing! Its great hot, sliced in half with butter and/or peanut butter. Without the egg it is thinner and harder to slice in half so I usually use the egg. It spoiled me when I tried everyone else's. I think of all others as corn cake. Lol.

My cornbread is made with Three Rivers mix without sugar, but bacon grease in skillet. Like you said, I only make it with pinto beans and in winter I like cornbread muffins with vegetable beef soup.

One of the yardsticks by which I judge a cooking channel is, “how do they crack an egg.” Tom, you pass with flying colors: one firm, confident, no-drama tap on the countertop results in a clean, fragment-free split which reduces the likelihood of errant bits of eggshell where they are not wanted!

I am making you dressing for Christmas this year so I just baked your cornbread! I always like to know brand of cornmeal and flour you use!! Thanks for sharing! I too scrap every drop out of the container!! I have made many of your recipies. Just made your chicken chili yesterday! Had it again tonight! Yummy! Had to order Randal beans as my stores do not carry them.

I use baking powder. When I take my skillet out of the oven, I sprinkle yellow corn meal in the bottom first. When I pour in the mix, it crusts really well.i also let my mix sit to swell, then add a tough liquid to thin just a bit before pouring it in. Lastly, I have a square skillet just for cornbread. Nothing else.

My husband's family comes from the Chattanooga area (TN, GA, AL) and that man HATES sweet corn bread. He says sweet bread is a dessert, not a bread. I grew up with only ever having sweet corn bread. So that's been a bone of contention for almost 51 years now.

I know Southerners use cornbread stuffing for Thanksgiving stuffing. However, I’ve never made it with cornbread. My family has always used (in my Mom’s case) stale bread. It’s not stale, but she’d put the ends of a loaf of bread in a paper bag, and they’d get dried out. Sounds gross, but it was delicious stuffing (or dressing if it didn’t get stuffed in the turkey). When I make it, I place white bread or leftover hot dog or hamburger buns in an oven at a low temperature and sort of toast them. I start out with that for dressing. I’ll try cornbread someday.

Every southerner I’ve ever known, including myself, makes dressing to go with the turkey. I’ve never seen anyone stuff a turkey with a bread stuffing of any sort. Dressing usually has chicken or cut up turkey in it and like I said it’s a completely different dish than the turkey. Just about any southern grocery store that cooks breakfast, lunch and dinner will have dressing as a side dish as a choice once or twice a week and it’s not necessarily served with turkey. We just love dressing and giblet gravy that much.
