That's what a Cadbury Crunchie is and the reason I got into making honeycomb candy. Old fashioned puff candy is the name my home state of Massachusetts gave it. Alot of different regions, countries and states have variations with little tweaks to the recipe, all just as tasty as the one before with a different name. Edit Cadbury Crunchie's are from Ireland. I buy mine at a convenience store in Charlestown, Boston, MA

Could it be put in silicone molds instead? I’m thinking it would be easier to get out because the silicone allows you to push it out since it’s not rigid….also it would form it so you don’t have to break it and have irregular chunks…so just wondering if you ever tried silicone molds?

We called it seafoam. It was my favorite growing up. My mom would buy it once in a while , generally when we were Christmas shopping. It was always dipped in chocolate which is the way we liked it. Last month I stopped at a candy shop at the beach and they were asking $28 a lb for it! I only bought 4 tiny pieces , just a bite size so my friend could try it as she had never heard of it. I am going to make my own and dip it in milk chocolate.

Same here I have never heard of it being chewy or sticky. But the consistency it's always been when I had it was kind of like floral foam like so airy and not at all hard or sticky like hard candy more like dried bread crumbs..., crumby and should be texture wise nothing like butterfinger or hard nor sticky.

My family has a family-made candy cookbook from my nana's recipes (my dad's mom). All the ladies in our family have a copy of it ever since I was little (my nana died when I was a baby so I never knew her, unfortunately), but EVERY christmas, my mom makes candy. She makes this sponge candy and dips it in chocolate and she also makes toffee with chocolate and pecans on top as well as divinity. Those are our family staples during the holidays :). Thank you so much for this sweet video, I'm thinking about taking up the candy-making work soon, especially so I can pass it on to my kids in the future.

That is the exact recipe my sister uses here in Western NY ( I’m from Buffalo). She had it down to a science. But it shouldn’t be sticky or stick to your teeth. It should be very airy with a crunch and basically melt in your mouth. Someone mentioned the texture of being like “floral foam” and I would say that’s an accurate analogy. All of our local candy shops sell it. It’s generally only made in the cold months ( has to do with humidity, I think) ands it’s ALWAYS cut in squares and dipped in chocolate. I tried it years ago with her when she first got the recipe and ours would puff up and then slightly collapse giving us a harder, stickier consistency, more like what you made. After multiple tries I gave up. She made it the next Xmas with the person who gave her the recipe and she learned the little tricks of the trade from her, or whatever to get it just right because she’s been nailing it for the last 20 yrs. It delicious! Good try and as long as you enjoy it that’s all that matters!

I grew up in Chicago in the 40’s and 50’s. It was sold in rectangular blocks about the size of a small brick wrapped in cellophane. It was very light and never chewy or sticky. My mother would cut small chunks off with a sharp knife and the pieces would dissolve as soon as I put them in my mouth. The problem with the Fleet Farm seafoam candy is that they cost it in chocolate "flavor" instead of real chocolate. It used to be real chocolate but that changed many years ago. Many are like that now. I always check the label on any I see sold to verify before I buy it. When it's coated in chocolate flavor it spoils it for me!
