The schools I attended always served custard with chocolate sponge. Blancmange and jelly is very much a family favourite. Your recent videos using evaporated milk reminded me of the dessert I often made when the children were younger. A small tin of evaporated milk would be beat so it became light and fluffy, doubling in size and stirred into a partially set jelly. This was then poured over some chopped fruit and left to set in a fridge a really delicious dessert.

We never ever had sponge with pink custard, it was always choc/ crunch, concrete as we called it, lt was like shortbread, but you'd use a knife to get through it 😂

You can buy packet blancmange online. I left the UK in 1963 when my parents decided to emigrate to Australia. Many of the school dinner puddings mentioned these days weren’t part of the repertoire when I was still at school there. We got things like sago (frog spawn) ground rice, semolina, steamed pudding with ordinary yellow custard. I certainly never remember things like Manchester tart or cornflake tart. I don’t recall cheese flan being on the menu either. I would have had a further 5 years at school had we stayed in England, instead I finished my education in Australia where we had to take a packed lunch. That was certainly a big culture shock.

I searched and found some at a brewery shop lol it’s being posted as we speak. I have to make the malt loaf! I have Not tasted since I came to OZ in 1974. I just had to watch your video solely because of the pink custard! I remember it well though I think I preferred the yellow custard. School dinners were meat and two veg and a pud. My daughter is now a teacher and she prefers to take in sandwiches. My first primary school it was compulsory to eat EVERYTHING. Every Monday was prunes … I could never stomach them. The cook used to stand behind and force them down me. Today I can’t look at them. My husband couldn’t eat meat so they’d take it away and mince it up and again force it down. Oh happy days 😂

I have seen people temper egg yolks all the time Rik, why cant you just mix them in while its all cold and then bring it to temperature. cheers Allen.

Hey mate great question, Tempering egg yolks into warm milk for custard is better than mixing them into cold milk for a few key reasons: 1. By first mixing the yolks with a small amount of warm milk, you gradually increase their temperature. Smooth Texture: The goal in custard-making is to achieve a smooth, silky texture. By tempering the eggs, you ensure they blend evenly into the milk without cooking into lumps. This results in a uniformly smooth custard. 3. Thickening Efficiency: Eggs act as a thickener in custard. When they're tempered and then added to the warm milk mixture, they thicken the custard more efficiently. Cold eggs added directly to hot milk might not distribute as evenly, leading to an uneven texture. 4. Control Over Cooking: Tempering gives you more control over the cooking process. I've never heard of pink custard. First thing I thought of when I saw it was that it looked like peppermint! What do you think? I have the flavoring on hand. Only I'm supposed to lose weight, not sit around eating delicious chocolate cake! Oh, what's a girl to do??

Pink custard isn’t coloured regular custard though. It’s Strawberry Angel Delight powder made up with boiling milk. Ask any school cook from that era.

Sorry - ask anyone! only a small amount could be made with Angel delight powder - larger kitchens made this way - cost effective. Enjoy it the way you remember. Best, Rik

@@BackyardChef why only a small amount? It wasn’t actually the branded product I was talking about, the one you get in little sachets at the supermarket. I mean the big catering sacks of the stuff, often mistakenly called ‘blancmange’. It was this ‘Angel Delight’ type powder they used to make the pink custard, obviously diluted more with milk than one would do to make the mousse dessert. You could even taste the faint strawberry flavour in it, which is why pupils saw it as an exotic difference to regular custard. I only know this because Mum was a school cook btw. Lots of trade secrets 😁

Your "pinches of salt" seem quite heavy-handed. If you watch your videos (from the side-view as we do) you'll see why. Your "pinch of salt" borders on just under a half a teaspoon -- a LOT of salt for one small cake.
