By appearance, the clams look steamed. Raw clams are more translucent, lay flat in the shell and are soft in texture.

To me, they tasted like raw clams. Susan thought they were cooked. None of us are sure.... Thanks for your insights! -Bill and Susan

@@whatiate2000 I looked at a few more photos of the same dish on Yelp and the clams look steamed as the clam meat is opaque, not translucent and the edges are curled. I'm sure the clams were cooked quickly and gently to maintain softness. If longer, the meat would be chewy and tough.

Hi Bill and Suan . . . my mind is having a hard time dealing with Susan saying that she'd rather have those honey bbq ribs over char siu anyday. lol . . . . now i'll be going to bed tonight and dreaming of my grandma's char siu and her crispy pork . . . unfortunatley, i have no idea of how she made it from china to the mississippi delta in the 1920s . . . but i'm glad she arrived there - - instead of new jersey, lol . . . all i can say is that i'm happy with my 70 years here in mississippi . . . by the way, Bill . . . the catfish sandwich from my local bbq joint that i mentioned last week was a generous fried fillet on a hoagie roll, slathered with tartar sauce with a couple of raw onion rings on top . . . simple, but delicious . . . our low temps for tonight here in east central mississippi are supposed to be in the teens . . . so, i've got to go get my faucets dripping before turning in . . . see ya'll next time . . . . . . . Thanks Danny! Stay warm!. That catfish sandwich does sound good. I've been wanting to do a Catffish catch, clean and cook video. Usually, I let catfish go because I'm afraid of "getting spined". One time while fishing in the evening, I left my pole to go get a flashlight. I came back just in time to see my whole fishing rig get yanked over the rail. I tried casting to see if I could snag it, but it was gone! Three hours later, I was casting the other side of the bay and I felt a tug. Reeled it in and it was MY FISHING POLE! And, there was a 8 pound catfish on the end! Was a struggle to haul it in, as I didn't have a net. But I got her! She was full of eggs. I didn't realize catfish eggs were good to eat. So, I filleted and threw the carcas out for the Bald Eagles to eat. That was a really good fried catfish breakfast I made the next day! Yea,, NJ in the 70s was rough. No asian groceries. We had to drive an hour into NYC for cooking supplies from Chinatown. Thanks again for all your support! -Bill and Susan

In this video they are eating at MOON GARDEN, on Vineyard, and I am from NUUANU VALLEY, up the PALI HIGHWAY, going towards the tunnels, towards KANEOHE BAY or KAILUA,never heard of the place, and you are very close to downtown Honolulu, near the beach, but because Hawaii is so expensive now, many local people have left because of the cost of living. Even though I haven't been home in many years, I still have the OHANA SPIRIT .

Aloha! Thanks for sharing Richard. I know, and it's sad to see that so many are leaving the islands. I hear Henderson, NV is nice. One of the few places on the mainland where you can find Gau Gee! - Bill and Susan
