Agree... might be one of those animal rights veee-gans that did the thumbs down. Those idiots are trying to pass laws in my state that will make it illegal to grow bovine, pigs, and birds for harvest. They even want to outlaw owning pets, calling it "animal slavery".

@@jenniferwhitewolf3784 Well if any vegans are reading here is my recipe for kale: Wash and cut 2 cups of kale Heat a pan with lots of coconut oil. This is important as pan needs to be very slick for next step Slide all that nasty kale into the trash were it belongs Hope this helps any vegans.

Chef Jeffery!!! I made a beautiful big pot of stock yesterday and asked my dear NON-COOKING HUSBAND to pour it into the strainer for me. I had my back turned while I was getting the meat off the necks. He misunderstood what I wanted him to do with the stock and POURED IT DOWN THE DRAIN!!!😢😢😢😢 Bless his heart he thought I was saving the vegetables🥴 I was laughing and crying at the same time😵💫 So today I'm doing it all over.

CHEF, you hit it dead on as my 97 year old neighbor taught me how to do this year's ago. She also included turkey backs. Luckily I can find fresh turkey tails, necks and backs right here in Los Angeles, California! Fresh or smoked turkey wings or drumsticks don't work for me as the turkey tails have more flavor because they have more fat. I do use smoked turkey tails for cooking my greens which is readily available here as well. Just gotta know where to look and go. Thee best stock for your dressing ever! Many thanks for sharing with those who didn't know 🙂

They're giving it a thumbs down because they don't cook this way probably. Hopefully they don't have tasteless food. You got to have a good stock in order to have good flavor to the dressing. If it's because of the turkey tails, you can leave them out.

The depth of the turkey stock is liquid gold. Here is where I slice meat off bones and boil. Great way to use carcass for bold turkey soup, turkey and rice, homemade dressing and giblets for gravy. Chef you got my mouth watering now!!! Hehehehe I boil my skin and neck etc and bones in with turkey stuff because I always do chicken salad as well at holidays. This is such a rich stock. Love ya cooking 😂😂😂❤️❤️❤️❤️

I’ll also pour some of the stock into old fashioned ice cube trays and pop into a freezer bag when frozen solid. Then I just pop a stock cube into whatever I’m cooking. I’ll also throw some pepper corns into the stock.

Absolutely the homemade turkey stock is the best! I have been making it a few years. I just found the turkey butts/tails last year. Usually, I use turkey wings. Roasting in the oven till everything is golden brown is critical for stock color and the color of the gravy/dressing/etc. You have a few more ingredients in your stock, and I will add them to my recipe this year. I bought a roaster oven from my favorite thrift store for $15 this year with turkey broth on my mind. Make this early and freeze like you said, chef. Get as much done early as you can. The secret to planning, as you said. Thanks for the inspiration!

I’m going the OSSF route this time around. I always layered the top of my cornbread dressing, before I put it in the oven, with seasoned parboiled turkey tails. I never thought they were too oily. They would drip down into my dressing and at the same time they’d come out roasted with a nice color. I didn’t eat them but all the menfolk did. Thanks and continued Blessings.

New idea for me to cook the bones and tails in the oven. I always just put them in the stock pot and simmered them. My family would snack on the cooked meat. We don’t care for the meat in our gravy or dressing but I’m absolutely going to try your oven method. I grow my own sage and thyme in the summer just for my dressing.

I use my crockpot. I’ll put it on after I clean up after supper and let it cook on low overnight. I’ll can it up in the morning, pressure cook it for 90 minutes and I’ll have turkey, chicken, pork, or beef stock to cook with. I also use filtered water. It makes a big difference.

Listen me and my brother fight over the turkey butt so I buy a package of butts😄I will start on my stock Friday, I make gravy, egg rolls, steam dumplings from turkey necks.
