What are your thoughts on tires for this type of pulling? In transfer-sled pulls 30-40% tread is better than 'new' tires. Is this similar or do new ones work better?

The track decides what works better On a hard track like dry clay the 30-40% tread hard old tires work the best But on loose powdery tracks that are more like a field would be most of the time a new tire can “chew” through and the half wore ones won’t
