Old SCHOOL Raisin Pie
This is a pie that my grandmother made on a regular basis growing up
It’s Very Easy and Delicious
Ingredients:
4 cups water
4 cups raisins
1 cup light brown sugar
5 tablespoons cornstarch
1/2 teaspoon cinnamon
1/2 teaspoon salt
2 teaspoons lemon juice
3 tablespoons butter (not margarine)
1 teaspoon vanilla extract
2, 9″ deep dish pie shells
Directions:
Combine raisins and water in a medium pot, bring to a boil, and cook for 5 minutes.
In a separate bowl, blend brown sugar, cornstarch, cinnamon, and salt together. Slowly stir this mixture into the hot raisins.
Cook and stir until the syrup thickens (this happens quickly). Remove from heat and stir in lemon juice, butter, and vanilla. Cool slightly.
Pour the raisin filling into one of the pie shells. Remove the pie crust from the other shell and place it on top, sealing the edges by pinching them together. Use a knife to make a couple of slits in the top of the pie.
Bake in a 400 -degree oven for 30-35 minutes.
