That's gotta be a cool gig for a cook, being the chef for a sorority. There's no real big things to be worried about. You make 3 meals for a 20-25 people a day. I'm sure it's harder than it sounds or looks, but you're catering to a group of people living the best life.

@@ChampCampMMA it does have challenges.. and rewards.. my wife was a chef until last year for a sorority; about 40 people each day some more in the evening for dinner and then a plated meal for around 80 on formal night every week... She did it for a decade and each year there was more and more specialty diets that they insisted on. Started with some dairy free... then gluten free... then vegitarian... then vegan... and more and more girls required their own specific meals. That and she was expected to know what they would like at certain times of the year; before finals there was certain likings; then she always knew lots of fish and chicken before spring break because girls are cutting weight... The worst thing though was that these are mostly very well off girls; and lots of them have no idea what work is; so they were very disrespectful without even realizing it.. Not trying to be; but they just didn't understand how much extra work certain demands were or have any sense of what goes into catering to them at all moment. Still; my wife loved that job. And when she left she had cards and letters and notes from all the years thanking her and telling her how much better their college experience was because her cooking made them all so happy... I have to admit; When i read lots of them I felt a bit emotional too; just knowing how hard she worked for those girls... a decade; I don't think she missed more than five day and she worked 10-12 hours every day for them even though her contract only paid for 8... But she always had to get special treats and make home made cookies for the road or special birthday dinners for one of the girls. I know it was a great job because I know how much my wife loved that job.

I love how careful and tender and respectful you are of the products that you are cooking. I'm so tired of seeing (mostly) amateur chefs chopping, throwing food around, bam this, bam that, guillotine editing styles, and totally disrespecting the food, favoring convenience over flavor and taste and time. You're the best!

I just made pot roast today too. It was so good. Not as many ingredients though - just broth, Cabernet, onion, Worcestershire, carrots and rosemary. Absolutely perfect.

Looks great. Only thing i do differently is add my veggies last half hour so as not to loose them. I serve it with the meat and still get the flavors in the broth. I also use bay leafs

Can't go wrong with pot roast. Kev said no garam masala, but everyone should try making curry with chuck roast at least once. It's a wild combination of intense beefiness and spices.
