Leberknödelsuppe is a very rich and delicious soup. The recipe that Majkl knows originates from Bavaria. The specialty in this soup are the liver dumplings that are usually made large. They are served in a beef broth, and the combination is amazing.
Ingredients for the beef broth (makes 4 litres of good beef broth):
2 onions
1 clove of garlic
2 parsley roots
3 carrots
1/3 of celery root
1 bayleaf
4 pcs of allspice
4 pcs of whole peppercorns
2 teaspoons of salt
1 to 2 kg of beef ribs
4 pcs of beef marrow bones
6 litres of water
Ingredients for 9 dumplings:
1 onion
1 spoon of butter
1 garlic clove
2 eggs
1/2 kg of beef liver (can be substituted with pork liver or chicken liver)
3 old buns
1/2 litre of warm milk
300 to 400 g of bread crumbs
1 tablespoon of homemade dried marjoram
1/2 teaspoon of salt
1/2 teaspoon of pepper
