YES SALT! I forgot to mention but goes in all my brines. Do yourself a favor and and make a simple standard brine to can up all your goodies. This brine is on the sweet side, so you can definitely cut that way back if you want a more traditional pickle brine.

I used to use a ladle to pour my brine into jars but have switched to putting my brine in a pitcher (well it's my blender w/ a spout). I can pour quickly without a funnel. Your videos are so amazing!

Put your pot of brine (or whatever you are dipping ) on the right side of your jars, then you arent trying to shuffle hot jars, just move your funnel from jar to jar. Also write the date in the lid so you know when it was canned. One more tip, dunno if you do it or not, a splash of vinegar in your canner water will keep your jars clean and not allow sediments to stick to them during canning.

I have made pickles till I don't want or need any more pickles or relish. Have eaten cucumbers every way I can think of. And they are just keeping on making like crazy. I give them away, and still have way too many. First time to grow them in a raised bed on a cattle panel trellis. Never have I ever had cucumbers make through a Texas summer.

I have trouble getting pickle spice here in RSA so I buy Brijani spice and do exactly what you do. Fish out the "sweet stuff" and use them in my jams and the rest in my pickle and relish... My daughter now even knows what to do when mommy says please "sort" this packet of spice...

I do this also. And it can also be done by just eliminating the sugar. I'm cajun & we tend to eat hot spicy things, so I do pickled hot peppers...a mixture & will add onions, mirlitons (chayote squash), cucumbers, zucchini, etc. Can't eat gumbo with these. 😁

This is my favorite brine for beets. Cook the beets with skins, tops and roots. Let them cool and put in jars = cut them the size you want or use the smaller ones. Pour the brine and process as you would other pickles. Love this!

I don’t know how it works yet but I used this little tip two days ago.... if you put a grape leaf or a blackberry leaf in the bottom of each jar of your pickles, the tannins in the leaves will keep the pickles crisp...? We shall see!

Is it not necessary to have hot boiled jars when placing food in them to avoid jars breaking from the hot brine? Do you cover that in a different video? I thought the food always went into jars freshly out of the hot water? I've just started canning and don't want to get my family sick, what say you?

I do not make sure my jars are hot just clean. The only time I heat my jars first is if I'm canning in the winter and my jars are much cooler. If your jars are clean you can put them in your oven at 200degrees F while prepping your food if you want to be extra safe
