YES SALT! I forgot to mention but goes in all my brines. Do yourself a favor and and make a simple standard brine to can up all your goodies. This brine is on the sweet side, so you can definitely cut that way back if you want a more traditional pickle brine.

How much sugar for something like a dill ? Do you still add this sweet brine to something like that?

What kind of inegar do you use in this receipe? 5%, 7% or 35%? Or? There are different kinds, and with dilluting with water I want to make sure I'm not using to "weak" a vinegar. Thank you, I love the idea of one brine for all (and the hommage to Tolkien)

I have a diabetic child. Can I omit the sugar? Any suggestions? I'm not sure what purpose the sugar serves.

I used to use a ladle to pour my brine into jars but have switched to putting my brine in a pitcher (well it's my blender w/ a spout). I can pour quickly without a funnel. Your videos are so amazing!

I used your simple brine to can red cabbage and it won a thumbs up from my picky hubby. After a tiny sample taste he took ownership of the entire pint eating it all with his grilled cheeseburgers dinner. Thank you, I love a good recipe that I can easily remember.

I write on the lids with a crayon when they come out of the canner. The crayon melts from the heat and it works great.

Put your pot of brine (or whatever you are dipping ) on the right side of your jars, then you arent trying to shuffle hot jars, just move your funnel from jar to jar. Also write the date in the lid so you know when it was canned. One more tip, dunno if you do it or not, a splash of vinegar in your canner water will keep your jars clean and not allow sediments to stick to them during canning.

I have made pickles till I don't want or need any more pickles or relish. Have eaten cucumbers every way I can think of. And they are just keeping on making like crazy. I give them away, and still have way too many. First time to grow them in a raised bed on a cattle panel trellis. Never have I ever had cucumbers make through a Texas summer.

Thank you for the recipe, using it tonight with a garden mix of cauliflower, carrots, cucumbers, celery and onions. A couple of jalapeños may help out as well.

I have trouble getting pickle spice here in RSA so I buy Brijani spice and do exactly what you do. Fish out the "sweet stuff" and use them in my jams and the rest in my pickle and relish... My daughter now even knows what to do when mommy says please "sort" this packet of spice...

I do this also. And it can also be done by just eliminating the sugar. I'm cajun & we tend to eat hot spicy things, so I do pickled hot peppers...a mixture & will add onions, mirlitons (chayote squash), cucumbers, zucchini, etc. Can't eat gumbo with these. 😁

This is my favorite brine for beets. Cook the beets with skins, tops and roots. Let them cool and put in jars = cut them the size you want or use the smaller ones. Pour the brine and process as you would other pickles. Love this!

I already do that it is great way doing it. I do some of my cabbage as dill pickles and it makes the best tastin saurkraut that way.

I don’t know how it works yet but I used this little tip two days ago.... if you put a grape leaf or a blackberry leaf in the bottom of each jar of your pickles, the tannins in the leaves will keep the pickles crisp...? We shall see!

​@@theresaglass1831I know this is an old comment but my grandma taught me to only waterbath my pickles for 7 minutes. I do 8-10 personally. But the consistency is good and it works, they keep perfectly.

Question please; I am getting confused on the correct amount of salt/sugar/vinegar to use. everyone does it different. If you could please. If I was pickling beets/greens-beans or onions in a 32oz Mason jar, what is the best mixture please. trying really hard to eat better and healthier.

What a great idea, sometimes I only have a few cucumbers , peppers, etc., not enough for a full load of each and in Georgia canning in the summer is brutal for just a couple of jars, never thought of canning a jar of this and a jar of that together. Thank you so much 😊 you just made my day!!!!!

Thank you for this, I just need this for the brine aka pickle juice. I have bad cramps at night when I try to sleep and the juice really helps. Your recipe is a little different than others I've seen, they don't include sugar. I'm gonna give it a try!

Love your channel. I use a bamboo knitting needle as my debubbler and to dig stuff out of the hot water pot. I found new in the package some very large ones at the second hand store. For 50 cents a pair. They are amazing

I've always wanted to learn to do canning. Do you have to grow your veggies yourself? Then make brines. You have to sterilize jars and lids right. Do they have a book on how to do this?

Yes The Ball Complete Book to Canning and Preserving is a great resource. You can preserve produce and meats from the grocery, farmers markets or your own garden.

Hi, let me start by saying that I Love Love Love your channel! I have learned so much by watching your gardening and canning videos. For your simple brine, if I’m doing dill pickles, do I add the sugar if I don’t want them to be sweet? Mustard seed - soooo easy to grow! I haven't tried celery seed yet. Zucchini preserving is something I need to learn now. There's Zucchini ready and I only know about relish and zucchini bread. (never made either)

I've got a question, maybe I didn't hear. Are you pressuring canning or water bath canning? My grandmother "pickled' just about everything, some meat. I can't lift a pressure canner.

Do you have a non-sweet brine? I only use sugar in sweet pickles and beets and then not too much of it.

It's a delicious relish to be used any time you would typically use relish - burgers, sausage, sandwiches, meats etc.

Is there any difference in white distilled vinegar? I've seen it in the farm stores, aka Rural King, and the grocery stores, prices vary alot, is it all the same? I see you have pickling and canning vinegar, whats the difference?

Rachel, I wonder instead of using magic marker before boiling, maybe buy that garden permanent marker that can take rain. doesnt fade. I buy them on amazon.

Is it not necessary to have hot boiled jars when placing food in them to avoid jars breaking from the hot brine? Do you cover that in a different video? I thought the food always went into jars freshly out of the hot water? I've just started canning and don't want to get my family sick, what say you?

I do not make sure my jars are hot just clean. The only time I heat my jars first is if I'm canning in the winter and my jars are much cooler. If your jars are clean you can put them in your oven at 200degrees F while prepping your food if you want to be extra safe

@@rebeccarichmond8963 the salt is to draw out excessive moisture, let veggies sit then drain off, some recipes suggest you rinse and some don't. If using an excessive amount of salt personally I would cut back some or rinse.

what type of vingar did you use? i want to make onion rings but they require me to murder an onion which is very difficult so i had to devise a way and i thought about soaking it in salted water for a week to murder it but would that change its taste?
