With the egg craze, I suggest you make some egg replacements videos. Something like, "Can't find eggs? Use this instead!" kind of title. Also, one of my family members told me today, "Eggs and milk are really expensive. Chicken is also going up. Good thing I had to learn how to cook vegan for you because it will help keep the grocery bill down. Lots of beans, lentils, and rice."

The same quantity of _besan flour_ , aka chickpea flour will do the same thing. Adding other "seed" flours such as buckwheat, cornmeal, rye, whole wheat and oh yeah, let's not forget ground flax will also make multi-grain pannies to die for.

Besan flour is not chickpeas flour. It's made of chana dal. But still good protein source and are quite similar

I think using chickpea flour would improve the texture a lot actually, since canned chickpeas are already cooked so the starches are already modified, instead of it gelling up during the baking process.

Also, cooked chickpeas have a lot of moisture, and you can't eradicate any of it (tho you can compensate by adding some kind of flour); with chickpea flour, you can control the moisture and will have more control over the texture.

1. Love the mustache -- you look handsome. 2. Thanks for another great recipe. 3. I'm urging you to make chickpeas from dried. -- they taste much better that there's no comparison. Cook 10-16 oz at a time, in a big stock pot (they swell to about 2.7x their original weight). Freeze 'em in 2-cup batches (a can is about 1.75 cups) and you'll have 'em on hand. (You can also freeze some of the cooking water -- just like canned aquafaba.)

It has a crispy crepe texture. Ill add chickpeas to my buckwheat and hemp pancakes. Fyi i use flax eggrather than baking powder. Lentil flour also raises well without any acids

We love the birch benders plant protein pancake mix! It very recently changed recipes from using pea protein to chickpea flour. It is a delicious mix either way and makes great pancakes!

Sauce Stash, why don't you cook dried beans (chickpeas or others) from dried beans and freeze them? They are radically cheaper and better tasting.

@SauceStache I love it! Air fryer snacks are the best! I always like to think nuggets and croquettes. Crispy/crunchy on the outside and soft/gooey in the middle. Pairing it with homemade dipping sauces is even better!

being that i teeter-totter from prediabetic to normal, i tend to cut down on sugar on just about everything i eat. so i would have to be selective with the apple sauce. i never tried it with apple sauce. i usually just use chia seeds as the egg replacement and it comes out pretty good, although a bit dry if left too long on low heat....i plan on using cottage cheese to add some moisture and added protein next time.

I have a question for the chickpea czar. Do you know anything about the differences between using blenderized cooked chick peas & chickpea flour mixed with water?

I'm not the czar, but here are two cents from someone who eats a lot of chickpeas, almost always cooked from dry, and who sometimes bakes with them. There are two major differences: 1. Cooked chickpeas swell up to about 2.7x their dry weight, and the only way to counteract that much fluid is to add some kind of flour (if you were trying to use cooked chickpeas in a recipe that calls for chickpea flour). 2. Cooking anything, esp. in water, alters its structure (think about oats, for ex. -- even if you were able to dehydrate a bowl of cooked oatmeal, you'd never be able to restore the oats to their pre-cooked texture). I prefer using chickpea flour bc you have more control over the texture of the batter or dough. Pls note, tho, that chickpea flour is very bitter; the raw batter or dough will taste pretty bad. (That flavor change is another indication of significant structural change caused by cooking.) I can't provide info about why cooked chickpeas would be preferable in some recipes but chickpea flour wd be preferable in others (apart from the obvious moisture issue). With a recipe like this, where the end result is flexible (= you're not baking a cake for which you want a lot of lift), I would think you could use either -- just experiment a bit until the batter seems to be the right texture.

Given that the batter has a thick-hummus sort of texture, I think yes (I use my food processor to make hummus). Nothing in this recipe requires the fine grinding that a hi-speed blender gives, tho I can understand using it if it's on the countertop.

Thank you SO much for the recipes and vegetarian leaning recipes...Please point me to the recipe link - I looked at the web page and could not find it! I started giving up the 'fake' meats about the time that impossible burger came out - Too expensive and not very healthy! PS: the first pancake is always a sacrifice - recommend making the first one a lil' dollar- sized that way your sacrifice is not too much! And, if it's good its a perfect taste-test size!

Hey everyone -- it's important you consume only organic peanut butter...peanuts are used as a rotation crop for cotton, and cotton is the most heavily sprayed crop in the world! Yes. Easy test. Go workout really hard. Limit your protein consumption. Tell me how you feel after. Then after you recover go work out really hard but consume a fair amount of protein before and after. There will absolutely be a noticeable difference in how your body feels. For a runner like myself I don’t want any down time. It’s important.

Ive started watching your videos during covid, fantastic transformation you made ! Ok, im not sure about the requirements for athlete lifestyle. But for the average person's lifestyle, you dont even have to think about including protein in every meal, its a big misconception. Fruits, vegetables, grains all contain protein, creating a misconception that special foods are necessary. The human body needs very little protein, as evidenced by the low protein content in mother’s milk, which fuels newborns who are at the fastest growth stage of their life.

I’ve put out a few videos, but it’s been a lot of work. It was a big combination of diet and exercise, but I did it slow over the course of a couple of years adding more movement and cleaning up my diet a bit at a time. It was a total lifestyle change really.
