Maybe you could play some blitz or bullet to practice with lower time. I think it's hard to practice that in a 15 minute game, since by the time you get to such low time you're already under a lot of stress, whereas after you play a lot of blitz or bullet, playing with lower time will start to become less stressful as you get more used to it.

Two bishops mate is really easy. I would guess 1800+ (lichess) could do it.
