My husband and I absolutely loved this recipe. I actually used a can of cooked lentils and just reduced the water content. The finished result was a-mazing !! thanks so much :)

Glad to see someone else who doesn't bother "sautéing" . There is definitely a difference if using oil, but I really don't notice any appreciable difference skipping the water saute. I make something very similar to this, but in the Instant pot. It took a few tries to perfect the timing, but a big help was to soak the lentils in warm water while I prep everything so I don't have to deal with soggy pasta or crunchy lentils. I used to get so frustrated because I'd always get the burn notice with the pureed tomatoes, but finally wised up and added HALF the can onto the broth and only cook under pressure for 5 minutes, then stir in the rest of the can after releasing the pressure. I usually put the lid back on and let it sit for a few minutes to finish and mellow, and it comes out great. I love one pot meals!

The main thing I would note if you want the 'al dente noodle' is just to add it half way through, BUT, it does come out a tiny bit less starchy (from my experience) I make a variation of this (all but I usually just quickly saute the onions and garlic for a minute or two and maybe burn the spices before adding the rest) - I should try it this way just to see the difference!

I take my leftover tomato paste and put it in a snack bag in the freezer. When a recipe calls for some I just take a paring knife and slice it when it's frozen, it cuts very easily! For those that don't like big chunks of mushrooms you can grate them. I'm going to put my peas in at the end so they don't get squishy. Lol. Great video!

Great recipe & video. Look forward to making this. Thanking for adding how long it will last in the fridge and that it can be frozen. I enjoy making one pot meals, batch cooking, and then enjoying one serving that day and saving 1 serving for the next day and then freeing the rest. Although this might be so good that there are no leftovers!

I do a pasta sauce with tinned lentils, frozen peas, a pasta sauce and I add a tablespoon of cashew butter and soy sauce. Nuke it in the microwave and it is great and quick.

I like this one pot recipe! Many pan recipes include rice and noodles in the same pan so I see no sacrilege. I'm as Italian as an American can be and as a cuisine of its own, Vegan food can be as unique as you like. Just don't use the traditional Italian names like Bolognese if it doesn't have Sofrito. You make terrific recipes and videos! Does your vegetable broth gain its rich color from onion skins Brian?

If you like your pasta al dente, you can add it later in the cooking process.
