Another way to add cold butter is to freeze the butter then use a box grater to chip up the butter. Return it to the freezer until needed.

I used 2 tbsp vital wheat gluten instead of xanthan gum and it came out great 😁👍🏻✨ only thing I would do different next time is maybe line the bottom of the pie pan with parchment paper (like the way you do with bread) so it doesn’t stick.

Annie, when I watch this recipe I see that you are holding 1/2 stick of butter. This equal to 4 tbsp. The recipe calls for 1/2 cup= 8 tbsp. I’m I right? If so, then there are is my problem bc I use 1/2 cup as your recipe dictates. Thank you for your help ❤

This had me confused too. I’m hoping I used the right amount. It looked like an awful lot of butter! A half cup of butter is equal to one stick of butter and there are 8 tablespoons in one stick. How come I’m struggling with this?😅. It isn’t easy being 79.

I'm not sure what happened with my crust. Cold butter and cream cheese, check ....my crust, after being in the refrigerator for 3 hrs, was a gluey mess. Everything seemed fine until I started rolling it out. Then it just stuck to the parchment paper. Back in the refrigerator for 10 mins....the same. So frustrating . I ended up scraping and putting in together in the pie plate.....I hope it works out. I will have to try this again! Any advice would be great! :)

I’m happy to help troubleshoot your issue 🙂 In order to do so, I have some questions for you! What issue did you have? Did you make any substitutions to the ingredients listed on my website? Did you start with frozen butter? What device did you use to cut the butter into the dry ingredients? What size egg did you use? Did your dough have many visible chunks of butter when rolled out before baking? Did you refrigerate your dough before baking? Did you blind bake or fill the crust and bake?

Her flaky almond flour crust is amazing but I can't have almonds due to the high oxalates in it. I found a super tasty and crispy crumbley (but not buttery flaky) that holds up as a great pie crust. 1 cup coconut flour 3 tablespoons keto maple syrup 1/3 cup of coconut oil or melted butter. That's it! Tastes like shortbread! Press and pack it in firmly and evenly by hand, blind bake for 12-15 minutes @ 350° fahrenheit, time depending on how firm or soft you want it. This is my go to pie crust now. Credit to Big Man's World for the crust recipe from his blog for keto pecan pie bars. Try it!
